Pressure cooking cakes

Sorry, it's been a while since I used cakes but I am trying to do pans. Used my new presto 23 qt (used a Mirro 22 before) and followed the instructions exactly. However, due to how high the water level was even with the lid bands on the bottom of the PC, it looks like the cakes got wet even being wrapped with tin foil. I even opened up 1/12 just to check and the dry verm layer got wet so I guess my question is...should I inoculate, or start over and just raise the jars even more from the water level next time? I definitely do not want to waste spores. I also have the traditional steam sterilizer method of a canner if need be. Thank you.

They're going to get "wet". You are building up a vacuum with literal steam and water bouncing around all crazy in there. It only stands to reason that they should be somewhat more wet than when they originally went in the PC due to this process, but not flooded or anything. If you feel like it's overly wet on the verm layer and that it somehow actually affected the internal wetness of your substrate then I would restart. If you have no spores to waste, then don't chance it on something you're not comfortable with.

Thanks for the info, and I'm leaning more toward starting over as of now, moisture seems excessive. Hopefully, I can find someone with some experience with the issue I'm having. I did everything per the tek and operation of the PC, they are 8oz wide mouth jars so short and squat which might need different operation in the PC

Do you have extra empty jars? I would suggest putting a layer of empties (with unsealed lids) on the bottom to keep the filled jars well above the water. I dunno, I've only done PF jars in a much smaller PC.

Yeah man, got plenty of jars. I just didn't anticipate it being an issue because for some reason I remember reading that it didn't matter that the bottom of the jars were slightly submerged in water. However, it may have only applied to quart jars, not 1/2 pints.
