Kitchen sab work is fine just take the right precautions. No open windows, turn heat off, make sure the room is draft free. Wipe down your counter and work area with iso. And make sure your sterile technique is on point, practice makes perfect.
Long as your not eating a burger while doing sab work you should be fine.
I recommend looking at thrift stores if you ever want to upgrade your PC. I got mine for 60$, it’s a 16qt Mirro pressure canner that can hold 7 x 1qt jars. Will make your life easier if your in it for the long run, if you just want a few shrooms don’t worry about it.
Again, if you want to fully jump into this new found hobby your going to want to learn agar eventually. If you just want a few shrooms make some brf cakes pf tek style and don’t worry about it. Most people start with pf tek cakes and work there way up agar and bulk substrate grows.
Personally I like shoeboxes, there small compact and can fit a lot of them in a small space. Hopefully this is enough to get you started. Welcome to Shroomery

So I think there is a lot more that goes into clean work when you are doing Agar or Clone work. If you are doing a PF Tek, you do not even need a pressure cooker so 10 PSI should get the job done. The biggest hassle people run into with PF tek is that when you order a spore syringe online, those spores come from vendors who fruit in open air, because all fruiting is done in open air. So there is always a risk of putting a contaminate into your jars. If you do pressure cook the proper PF BRF Jars and put all that work and wait all that time it does become a bummer to realize 1-2 weeks in that you might have a jar go bad for no fault of your own.
The only way to prevent this is to take up clean work which means proper PC, Agar, Plates, SAB, sterile techniques.. All of that stems from taking the same syringe and cleaning it up on agar and creating either an LC or dropping the agar on grain, which you will need to pressure cook for 90 minuets at 15 PSI and then also growing that out and transferring that to a substrate to do bulk grows.
All that being said, Start with BRF jars, boil them or insta pot them for the proper time. Post pictures and questions of your grow and we are all rooting for you!!!
Welcome aboard Mate.

Just double the time on your instapot and you’ll be fine, I use one for the 2 out of 12 jars my 23qt presto won’t fit. They’re at least 1.5times more expensive than a 23 at presto though so I’d recommend getting a real PC

did your instapot come with a separate pressure release for use in high altitude? If so you might be able to put that on there to get closer to 15psi I believe? Ive had a instapot but didnt really use it for myc work but it did come with a different pressure release valve that I think the manual said got it to 15... but that was a while ago I cant quite remember...
also start with pf tek if you want but you could also use a spore syringe straight to grain jars with injection ports but imo the sooner you can build a small flow hood (sounds like youre already having trouble with space) the faster you can move to agar and grain to grain ((ive never used a SAB just flow hood so cant offer advice in that area))) but good luck and I think once you get your first flush youll be hooked

I like to use two bags of perlite. It helps prevent drying out. 12 cakes is a little tight in there but should work real well with creating a microclimate.
Some tips:
Only use half pint Wide Mouth jars. Do Not use tall, skinny half pints! When mixing the PF Material, make sure it doesnt come out chunky or wet. It should have a consistency of damp sand before its loaded into the jar. Make sure u have a SAB built as well. Patience, have lots of it. Read oots of other threads in Mush Cult.

Thank you. I calculated that one perlite bag should be about 5.8cm in height, so I guess I'll order another one.

Perfect.
If u can find a tamale steamer, they work great for the PF Tek. Its what i use. Pressure cookers are for grains and agar, they are not required for PF Tek.
Also, try not to expect infections, try to prevent them by proper clean work protocols
