I would have to say Alex Honnold. If you haven't seen Free Solo I would highly recommend it. I have been following his career for sometime and he is inspiring to say the least.

They change, depending on whose around in life. Some moments are carried on and remembered more often, usually when some sort of wisdom or self acknowledgment goes. People eventually fade away and it's those memories which they may live through me/us and pass on to those we may find looking up to ourselves.

There's a bunch I can think of. The more people you learn about, the more people you admire generally I think. Especially big important people in the field (in any field) are generally admired by everyone for good reason. The leaders of any given industry or field are often really spectacular people who make you and me look like lazy shitheads in comparison. That's an exaggeration, but you get the idea.
Famous important people are often famous and important for good reason, except you know in cases like celebrities.

My dad is my role model for how hard working he always has been. He's a firefighter, fire chief, started a hazmat team, etc.
My grandpa is a role model for the things he accomplished. He's an inventor, member of mensa and cattel for the top 1% iq in the country. Professor at Texas A&M. He also worked at nasa. I think I got some really good genes from him. He wasn't all that nice of a person or father though.
Buckethead is my musical hero and role model. He just puts out so much music he's constantly working. He put out 275 albums since 2011 so you just know he's literally never stopped working and getting better. He also has never shown his face and turned down many big record contracts in order to keep putting out music at the pace he wants to. He's a true artist not in it for the money or the fame. He won't compromise anything for his art.

Terry Fox. I missed him run by my town in 1980 I was 6 and it was at like 5 am and i slept thru it. When Canada gets rid of the monarchy I hope to see Terry Fox on at least one denomination of our currency. From his Wikipedia;
In 1980, he began the Marathon of Hope, a cross-country run to raise money for cancer research. He hoped to raise one dollar from each of Canada's 24 million people. He began with little fanfare from St. John's, Newfoundland, in April and ran the equivalent of a full marathon every day. Fox had become a national star by the time he reached Ontario; he made numerous public appearances with businessmen, athletes, and politicians in his efforts to raise money. He was forced to end his run outside Thunder Bay when the cancer spread to his lungs. His hopes of overcoming the disease and completing his marathon ended when he died nine months later.
