Help please, tiny brown spots on shiitake myc

Hi,
Attempting to grow shiitake on unsupplemented hardwood chips, in jars. The jars are fully colonised and I'm assuming in the process of consolidating.
I have yet to put these to fruit, however I have opened the lids to inspect, then replaced with vented foil.
Recently I have noticed area of tiny brown spots starting to appear. I read somewhere that wood blocks typically turn brown before fruiting. Is this likely to be the same for jars, and if so, are the following images typical of this browning, or is this a sign of contams?
I have used the search feature, and whilst I can see examples of browning, I haven't seen anything as finely spotty as what I'm seeing.

I realise there is some condensation, probably more than optimal. Any help very much appreciated, as I'd rather bin these sooner than later if this is contam.
Thank you for any advice on this.

Thanks Diego, I wasn't familiar with the spottiness. First Shiitake grow! Feeling relieved, as it's been a waiting game and I'm really looking forward to seeing the fruits. Should I wait until they brown some more, before putting them to fruit, or do they need FAE once consolidated? I've cased with verm. Cheers for your help.

I'm not sure. Its been a minute since I've grown shiitake. You're gonna want a second opinion

It will definitely take several months. I always like to let mine pin in the bag before I strip it. A cold shock should work to get it to pin, just try to avoid any accidental cold-shocking before the block is fully browned, otherwise it can start to pin before it's ready.

Not following a particular tek, just following similar method that I used for lions mane previously. Intention was to fruit in the jars. I didn't use straight neck jars, I was wondering if I should dunk (in the jars) and drain, or perhaps skip the dunking and just refrigerate to shock. Once pinning, my plan was to add a little water periodically. Any thoughts welcome, thanks.

the problem with fruiting in jars is after 2+ months of browning, that substrate is going to shrink. you're not gonna be able to get it to just pin on top. If you're lucky the whole substrate might shrink enough to pop it out of the jar entirely.

Hmm, good point Forrester. The jars have a fairly shallow neck, so hopefully I'll be able to pop these out. I have 3 on the go, so I could always scoop one out soon and mix with bulk in a bag. If I choose to do that, I'll add some wheat bran and gypsum.
I'm also wondering if pouring verm into the sides of the jars might reduce side-pinning, then again maybe not as I guess it will have the same effect as casing.
The jars are kept cool at the moment, 60F, perhaps I should move to room temp until fully browned?
Thanks

I may be confused about what you mean but I wouldn't mix wheat bran into anything without sterilizing the whole substrate and re-making spawn. Don't wanna mess with bran without fully sterile conditions.
And yes I would definitely move them to room temp for colonizing/browning. My blocks would all start pinning when the heater would go out and temps would drop anywhere near 60. Plus they'll colonize and brown faster when it's a little warmer

Sorry dude. I ate one too many edibles yesterday and couldnt think. I did shiitakes in jars before years ago but it was sawdust and verm mixed. Like with pf tek just substituted brf for saw dust. Low yeild. I got like one mushrooms.

Absolutely, re. sterilising the bulk/bran. I can manage about 3 quarts in my PC. Appreciate the advice on temperature, it seems I've been running the risk of premature pinning. Luckily I think I've got away with the low temps, but they definitely go back into the bedroom tonight. On reflection I've been too hasty with the shiitakes, I've been spoiled by the quick timeline of oysters and lions mane. But I needed to learn more, hence this grow. I might get a few others on the go, whilst I'm waiting. These are cloned from supermarket shiitakes, tissue sample to agar, to LI syringe, then to jars. I've done the same with king oysters, but had far quicker results using BRF as opposed to woodchip. Cheers

Hehe, no worries man. I've come to have very low expectations of my work sometimes. It's more about the fun of learning than anything else.

If you have the time and the room; i would make your own plugs and grow outside. Alot of times you can get a cord of wood pretty cheap from a tree trimming company and they will produce for years

Hey, I like the idea, Diego. I guess it's coming up to the right time of year to prepare for that, too! Seems like a lot less effort over the long term.
