first time brewer, need help please

hey guys. im trying to brew some moonshine. the recipe i have is 10 lb sugar, 7 lb corn, 2 lb malted barley, 5 gal of water and 10g of yeast. well my fermenter doesnt hold 5 gal and especially not with the corn as well. i i used about 3.75 gal of water with 10 lbs of sugar, i feel i shouldnt have used that much but i wasnt sure if it coulve held 5gal or not with the sugar. is too much sugar going to fuck my mash up? what can i do to fix it? i scaled the corn and the malted barley according to the amount of water i had.

Looks nice.
In regards to your mash, I don't think that mush sugar will be a problem. Your potential alcohol is still well below the toxicity of your average yeast. I actually think you could do with adding more sugars.

How's the ferment? If you added the yeast 4 days ago it should be bubbling like crazy.

so the first night (approx 6 hrs later) and then a day or so later it was bubbling every 1 sec or so... now its slowed to around 6-8 seconds. i assume this is normal because they said after 14 days it will probably be bubbling once every minute or two

i already threw away the package but the dude at the brew store told me it was champagne yeast(grey and red package from what i remember), and i bought two packets (5g each) of it and added the 1/2 tsp per gallon of yeast nutrients that was recommended

Champagne yeast can remain active to quite high abv. It is likely that they'll eat all the sugars.
Do you have a hydrometer and understand its use?

i just did my first run, im a little worried about methanol... the first 200 ml of a 3 gal batch i have seperated from the rest. is that safe enough?

I highly recommend Ian Smiley's "Making Pure Corn Whisky". There are PDFs floating around of the basic chapters, though the part that gives approximate volumes of cuts is not in them. Per Smiley's instructions, when I ran a still I would collect everything from 3 or 4 runs (the low wines we're 40ish%), and add feints from previous runs (heads and tails mixed together - the secret for richer flavor). Then make my cuts on the second run. So it's hard to judge based on your process. One method is to collect in small amounts (say in 1/4 pints), keep them in order, then smell and taste them to find where to make the two cuts. The middle should taste sweet, almost fruity, not harsh (heads) or cardboardy (tails). Keep the heads and tails to add to the next run, they are mostly ethanol, and contribute flavor.
