Which species should I grow

Hey all, sorry if this has been asked before but I’m curious what you would recommend. What species should I grow? My goal is to provide a little variety at a farmstand where I’ll offer shiitake and blue oyster. Outside of these two, which species would you recommend I grow to have some variety. I want to offer fresh gourmet mushrooms at my stand and I’m thinking maybe lions mane, yellow oyster, pioppino, and chestnut. Anyone with more experience than me have some recommendations?

A little background: I have a 40 square foot fruiting chamber in my basement and I’ll be using supplemented sterilized sawdust in bags. No temperature control my fruiting room but it’s generally between 55-70 F depending on the season.

Another oyster would be easiest, but if I was you I'd do lions mane.

Yeah lions mane looks really cool.  I haven’t seen mushrooms at many local markets, so I’m not sure what’s working best for gourmet farmers.

King oysters are pretty popular. Pink and yellow Oysters sell well because of the color but they all cook down the same.

Shiitake seem to be a little more high value.

Thanks for the advice. Kings look very cool too. It’s hard to pick. I’m thinking I’ll just try growing them all and see for myself how they do. I guess everyone starts with shiitake and oyster.

White pored chicken of the woods, king stropharia, milky whites, maitake, elm oyster, any oyster really... the list goes on and on.
