Well It's not the same in CO, and I haven't really seen it on a menu in other states I've been to, but I can't recall seeing it on one or looking for it. I try to sample the local fare in whatever state/city I'm in.

Well please post when and if you do. After working in the restaurant and bar biz for 34 years I've become a bit of a "foodie". I can be really picky too, but I know what I like. I'm not mean or shitty when things are wrong though. Some people can be really mean and shitty to the wait staff and bartenders. I have heard people say they start with intending to give a 20% tip and for everything the waiter gets wrong or the person doesn't like they will subtract from that percentage an arbitrary amount from the tip.

Hey, anyone have any suggestions on what to do with a whole frozen turkey I have leftover from Thanksgiving? It was an extra I got from work, I originally was going to donate it, but I was really busy and just didn't get it done :facepalm:. It's been crowding my freezer ever since.

I'm either gonna actually donate it, cook it, meal prep and freeze a whole bunch of shit, or save it for a family get together next month and bring it to my parents for a roast dinner.

I've roasted chicken and stuff, but never an actual turkey. Anyone have any good recipes/brines/methods? Figured this was as good a place as any to ask.

Well, theres many ways to cook a Turkey, depends on what flavor youre looking for.

That way, after you finish cooking the turkey, u can use it for all sorts of different dishes like Turkey Pot Pie, Turkey Chili, Turkey sandwiches, etc.

And make sure u dedicate about a half day to baking the turkey. They take a long time to prep and cook in the oven.

PB - I'd brine the shit out of that turkey and then oven roast it and carve it to the bone and then eat the shit out of it for the next five or so days, probably doing 3x portions a day.

I hate pasta, I only make it once a year for my wifes bday. When I do make it though I go all out and make my own noodles and everything.

One my recent favorite foods is fire roasted rabbit. Salt, pepper, and honey on the skin. Put it on a large skewer, roast it over some nice coals until golden brown. Lot's of people like rosemary or other earthy spices for rabbit, I prefer to taste the meat with just the light seasoning mentioned before.

I also really enjoy making duck. I like to boil the duck for about 15-20 minutes in sugar water. This removes a large portion of the fat and adds sugar to the duck which will caramelize when cooking. Then salt and pepper it, maybe some honey to help the adhere the spices to the skin. Let it sit out on a pan for 4 to 8 hours, covered. Then lightly smoke it with a fruit wood for around 30 minutes, leave in the smoker at 275 for 2-3 hours, until the breast is 160 (this sort of medium-rare, but duck is so fatty I find it to be a good balance). Finally crisp the duck under the broiler, it takes about four minutes. This makes a very close replica to a traditional hard wood fire roasted Peking duck. The skin can be sliced in the traditional Peking style or left on the meat.

I really want to try rabbit. The local market has rabbit. I'm a little scared to get it though because I worry I wouldn't cook it right -- heard rabbit is easy to overcook and dry out.

And duck -- yes. I love duck. And the way you are talking about cooking it sounds amazing!

Rabbit isn't hard, but as they are small it is easy to over do it. Just keep an eye on it and get it off the fire before it dries out.

I do it outside on my fire pit. I buy frozen rabbits at the local butcher. It's a little pricey, something like $20 a rabbit, but since I only do it once or twice a year it's okay. You should give it a shot, it's an awesome meat. I made it for friends and family last year, lots of skeptical people there, those that tried it were in love.

I loove pasta, but seriously nothing beats home made noodles. Huge pain in the ass if you don't have a pasta roller. But so worth it.

I'm definitely gonna brine the shit out of it. If I do it, I'm gonna do it right. I don't think I could eat Turkey for 15 consecutive meals though :lol:. Turkey salads or chili for lunch every day for a few weeks is definitely doable though.
