Those are the weakest tacos I've ever seen. I'd be so let down if someone brought me those taco shells with no cheese. There's only like 5 shreds of cheese in there

This is a 30 day dry aged strip steak (black and blue) I seared on my chimney starter, a pineapple chutney I made from scratch, and some sauteed mushrooms.  Also my attempt at making it look fancy.

Steak  is by far my favorite food, mushrooms are a second.

Country of origin?  Anywhere with cows or boats.

So glad someone said it.

There's no way I can pick a favorite food. I like food too much in general. The closest I can come to picking a favorite food is "meat". I don't make a habit of eating the "weird things"... But aside from that, cook a piece of meat right, really doesn't matter what you do to it, I'm gonna like it.

I like real taco's. The taco's in the OP are good too, but I don't really even consider that a taco. I feel bad for the OP.

My favorite food is probably like a really great gyro or New York style pizza when done correctly. I'm super into cake too!!!

I really like plum hybrids too. Like Plumcotts and Plum/Cherries. Blood oranges are super good. Smoothies are great. Papusas are pretty great too.

Here’s my recipe for the general tsos, can use regular soy inplace of the dark and dales marinade. I happen to prefer dark though, even better is bluegrass smoked soy but it’s pricey

Although a dessert, few dishes can match the simple invigorating beauty that is the crème brulee topped with raspberries, strawberries, and a dollop ov whipped cream to my taste.  Hmmm, tacos al pastor con pina o tacos de lengua.  Rabbit cooked Greek style.  Duck cooked Thai style.  I'm also quite fond ov a properly prepared eel.

It's not semantics, it's a delectable gift to the tongue and tum vs. an impostor.  Inferior tacos are like stolen valor, the thief hanging onto the coattails ov a culinary king and getting dragged through city streets as angry abuelas hurl rotten tomatoes at its disgraced constitution.

I know you didn't ask me, but my favorite mushroom to cook with is the Butter Bolete. My 2nd favorite is the Candy Cap which reminds me that I need to get out there and find some. I can mail some out if I find a good quantity and someone wants to try them out. I think they are hard to find in most areas.

Newbie, do you age the steak yourself? I've never done such a thing and I don't know if I've ever had an aged steak. I probably had one from a steak house and just didn't realize it. If I did have a steak sitting around for 30days I would most likely be sketched out about getting an illness so I would end up cooking it well done and ruin it.

Not exactly my favorite, but it's hard for me to narrow anything down and this is the most recent pic I've taken of food I've cooked.

Sweet chili tofu.

Well cooked tofu, falafel, and lots of traditionally 'vegetarian' food is some of my favorite, even though I'm an omnivore, tbh. I think it's because all the good shit has so much emphasis on flavor, and spices. I love Mediterranean, Middle Eastern/Jewish/North African, and Indian food in general for those reasons.

I like both types of tacos  The Americanized Taco is still tasty as fuck as well as the Mexican Street Taco. I just wish they didnt load the Mexican Street Tacos with fresh cilantro. Its gross. It tastes like poison. Other than that, they are both tasty in their own way

Carribean food. It's the awesomest cuisine in the world, I reckon:

Let it be seen that you are nothing. And in knowing that you are nothing... there is nothing to lose, there is nothing to gain. What can happen to you? Something can happen to the body, but it will either heal or it won't. What's the big deal? Let life knock you to bits. Let life take you apart. Let life destroy you. I agree here...I've been a topping kinda guy for my whole life, but lately I've been gravitating toward straight cheese...it's a perfectly balanced flavor imo.

Although if I'm at a higher-end pizza place I like to get the Margherita and Neapolitan pizzas.  They're basically cheese pizzas anyway.

So many faves.
Tex Mex (which I took for granted living in the DFW Texas. It's just not the same anywhere else)
Lasagna
Steak (ribeye or filet)
Seafood (love some grilled fish)
BBQ (Texas in particular)

Tex Mex (which I took for granted living in the DFW Texas. It's just not the same anywhere else)
Lasagna
Steak (ribeye or filet)
Seafood (love some grilled fish)
BBQ (Texas in particular)

Yeah I love all these too. And man a good lasagna, with some good Italian bread on the side -- it's really tough to beat that

There was a great place here that made a killer lasagna (I could split it with the mate it was so big), but the place caught fire. Hopefully they will reopen. I make a great home made one, and the mate does too. Extra extra sauce, and don't skimp on the ricotta damnit!

Also that sour cream sauce on tex mex chicken enchiladas, I can't find it ANYWHERE here in Denver!

It used to be sushi, but lately I've been getting kinda tired of it. If I had to give an answer, I'd say it's pizza nowadays.

When someone said they'd rather die in the apocalypse than eat your emergency rations, and you said if that was true then maybe they're a part of the problem that should go.

Because "pasta" is a very vague term.  Pasta salad kind of pasta?  Ravioli?  Spaghetti with marinara sauce?  Fuckin dry pasta?  What kind of pasta?!  G'damn, boy...

A loooong time ago in Ft Wt. I worked at the Reatta in downtown. It's gone now. They're not bad, but I don't seek them out, and I never order them if they're on the menu. I would rather have fried mushrooms.

There's so many different pastas but yes a good pasta is A+

One of my favorite things to eat when I'm hanging out at home and watching TV and drinking beers is a simple spaghetti with some garlic bread

I don't think I could ever tire of it

Love me some fettuccine alfredo too

I've been trying to think about it a little but there's just sooooooo many different foods that I like that it was nearly impossible to pick

But probably the best thing I've ever had -- I mean a time when I was just sitting there in awe of how good it was, it was the first time I ever sat down by myself and had whole dungeness crab.

The whole thing.

I cooked it myself, and got lucky because it came out perfect, and then I just worked on it until I got every piece of meat that crab had to offer.

It was amazing.

One day I'll do it again but they're just so messy and it's quit e bit of work -- you really, REALLY gotta be in the mood to sit down and work on a whole crab. But that particular evening I was definitely in the mood and it was fabulous.

Dungeness crabs are pretty sizable too, so a good sized crab will offer up a lot of meat if you're patient enough to work on it.

YES! I learned how to crack/eat crab legs when I moved to the gulf coast. Let me ask anyone who eats them this, do you eat as you go, or save all the meat and eat it in big bites? I am a crack/peel all of them and eat after person. Shrimp too.

I can eat like five large Maryland (blue) crabs in like 40 minutes. I've never had a Dungeness crab, being on the east coast, but I do love crab. I also love crawfish, it's one of my favorite dishes to get when I'm in Texas, asides from a proper steak. The key to either crab or crawfish, IMO, is a six pack of beer. You have to sit back and enjoy it. So I try to stretch it out into like a two hour process. Eat, drink, eat, drink. But I like my crab and crawfish spicy, Old Bay seasoning or similar. I want to sweat.

All of that said, pizza is where it's at. I like it Chicago Deep Dish, NYC style, Detroit, Doritos, Grandma Sheet style, Ohio River Valley Style, you name it, I love it!

I like garlic bread. And I like eating various types of pasta on my garlic bread.

Pasta is up there for me, but I have to make it. I’m very rarely going to eat pasta at a restaurant. It would have to be a very technical pasta, a gnocchi or fancy ravioli. I do buy fresh pasta nests that are amazing.

Well please post when and if you do. After working in the restaurant and bar biz for 34 years I've become a bit of a "foodie". I can be really picky too, but I know what I like. I'm not mean or shitty when things are wrong though. Some people can be really mean and shitty to the wait staff and bartenders. I have heard people say they start with intending to give a 20% tip and for everything the waiter gets wrong or the person doesn't like they will subtract from that percentage an arbitrary amount from the tip.

Hey, anyone have any suggestions on what to do with a whole frozen turkey I have leftover from Thanksgiving? It was an extra I got from work, I originally was going to donate it, but I was really busy and just didn't get it done . It's been crowding my freezer ever since.

I'm either gonna actually donate it, cook it, meal prep and freeze a whole bunch of shit, or save it for a family get together next month and bring it to my parents for a roast dinner.

I've roasted chicken and stuff, but never an actual turkey. Anyone have any good recipes/brines/methods? Figured this was as good a place as any to ask.

Well, theres many ways to cook a Turkey, depends on what flavor youre looking for.

If you wanna go simple and most "Universal", go for the classic Holiday Turkey cook: https://www.allrecipes.com/recipe/13464/homestyle-turkey-the-michigander-way/?internalSource=hub recipe&referringId=206&referringContentType=Recipe Hub

That way, after you finish cooking the turkey, u can use it for all sorts of different dishes like Turkey Pot Pie, Turkey Chili, Turkey sandwiches, etc.

If u like Rosemary, try this recipie out: https://www.allrecipes.com/recipe/13525/rosemary-roasted-turkey/?internalSource=hub recipe&referringContentType=Search

If u wanna go with a stronger taste, u could do a BBQ turkey in the oven or flame grill u have one big enough: https://www.allrecipes.com/recipe/95158/bbq-turkey/?internalSource=streams&referringId=686&referringContentType=Recipe%20Hub&clickId=st_recipes_mades

And make sure u dedicate about a half day to baking the turkey. They take a long time to prep and cook in the oven.

PB - I'd brine the shit out of that turkey and then oven roast it and carve it to the bone and then eat the shit out of it for the next five or so days, probably doing 3x portions a day.

But that's just me; I eat pretty weird compared to most.

One my recent favorite foods is fire roasted rabbit. Salt, pepper, and honey on the skin. Put it on a large skewer, roast it over some nice coals until golden brown. Lot's of people like rosemary or other earthy spices for rabbit, I prefer to taste the meat with just the light seasoning mentioned before.

I also really enjoy making duck. I like to boil the duck for about 15-20 minutes in sugar water. This removes a large portion of the fat and adds sugar to the duck which will caramelize when cooking. Then salt and pepper it, maybe some honey to help the adhere the spices to the skin. Let it sit out on a pan for 4 to 8 hours, covered. Then lightly smoke it with a fruit wood for around 30 minutes, leave in the smoker at 275 for 2-3 hours, until the breast is 160 (this sort of medium-rare, but duck is so fatty I find it to be a good balance). Finally crisp the duck under the broiler, it takes about four minutes. This makes a very close replica to a traditional hard wood fire roasted Peking duck. The skin can be sliced in the traditional Peking style or left on the meat.

I really want to try rabbit. The local market has rabbit. I'm a little scared to get it though because I worry I wouldn't cook it right -- heard rabbit is easy to overcook and dry out.

And duck -- yes. I love duck. And the way you are talking about cooking it sounds amazing!

Rabbit isn't hard, but as they are small it is easy to over do it. Just keep an eye on it and get it off the fire before it dries out.

I do it outside on my fire pit. I buy frozen rabbits at the local butcher. It's a little pricey, something like $20 a rabbit, but since I only do it once or twice a year it's okay. You should give it a shot, it's an awesome meat. I made it for friends and family last year, lots of skeptical people there, those that tried it were in love.

This is the recipe I used, obviously I avoided the lemon and instead just used salt and pepper. - http://www.innatthecrossroads.com/spit-roasted-hare/

I loove pasta, but seriously nothing beats home made noodles. Huge pain in the ass if you don't have a pasta roller. But so worth it.

Thanks! All of those look like great recipes - I might do that rosemary one, that looks really good.

PB - I'd brine the shit out of that turkey and then oven roast it and carve it to the bone and then eat the shit out of it for the next five or so days, probably doing 3x portions a day.

But that's just me; I eat pretty weird compared to most.

I'm definitely gonna brine the shit out of it. If I do it, I'm gonna do it right. I don't think I could eat Turkey for 15 consecutive meals though . Turkey salads or chili for lunch every day for a few weeks is definitely doable though.

I haven't.

Someone once told me to try watermelon with salt because it amplified the flavor, but when I did it...I regretted ruining a perfectly tasting creation of nature, bro.

I'll try salt on an apple next time I have one, but I'm not looking forward to it.

Okay, so salted watermelon is great.

But it's even better with a little feta, mint, and balsamic vinegar. Cucumber is a good addition there too.

Perfect summer salad. You can also do skewers, and even grill them.

I can get on board with a watermelon salad (feta, mint, salt, vinegar, etc)  That sounds good, but if I'm just eating straight watermelon I'm gonna go purist with it.

Fair enough. I think it's perfect for really hot days if you're outside and sweating like crazy, but I get it.

Just like a few sprinkles of sea salt will do it too. I've definitely oversalted my watermelon before and it's just way too much

I like salt on Kholorabi and radishes as well as watermelon. I’ve never tried it on an apple slice, maybe on a hard boiled egg. When I make eggs for breakfast I certainly salt them lightly.

I’m a big chicken wing guy. I love great sauce and nicely done wings. I’ve been making my own bacon for a few years now. I actually like sausage better, but I do love bacon.

TBH, I salt things like a motherfucker. I also use a lot of limes and lemons in cooking, often in place of salt, but often aside it as well. Both are really important for flavor.

I'd recommend watching(or reading, think it's a book too) Salt Fat Acid Heat on netflix. Salt is necessary for most cooking, but iirc, there's a difference between table salt and sea salt or kosher salt which you use for cooking - table salt being the most heavily refined and processed option out there.

Curious....do any of you salt-on-everything people (no offense intended) happen to be cigarette smokers?

Nah, not at all. And it's not salt on everything, it's salt on the important things. Meat(as well as pepper, before cooking it, as well as letting it sit at room temp for 30 min, maybe with some olive oil too depending on the cook method), water for pasta, etc.

The salt on watermelon thing is more of a quirk, I don't tend to salt sweeter things or fruit like that(maybe just a few grains of sea salt in hot chocolate, or a cup of espresso, which don't knock until you try a home made french pressed caramel macchiato), but I looove salted and grilled watermelon.

Understood.  The meat, and pasta water is always important.  I do the same, and put salt on a hell of a lotta things, but I just can't get into the salted fruit.  Perhaps I'll give it another shot.

Everything i eat already has salt in it, cause i can taste it. Adding more isnt really necessary in my opinion. I feel like theres plently already and adding more would be over-kill

There ya go.  Prepared foods have murderous amounts of added sodium.

Indeed. Fast food included. Home cooked meals definitely lack the sodium of other non-home made meals (unless its meat).

Homemade meals only lack sodium when you don't use salt.  You're probably getting too much sodium if all you eat is prepackaged, and fast food.  Be careful out there.

No doubt. But doesnt meat already have salt in it naturally?

I appreciate the concern about salt in my diet. And i also find it ironic it went from "not enough" to "too much".

God i love Irony :yesnod:

Fresh meats have natural sodium, yes, but not enough to be worried about sprinkling some salt on your steak.
There's no real irony there...new things came to light, and the topic shifted from "not enough" to "too much."

That's called communication.
:highfive:
