I'm thinking of buying this adaptor for my soda stream so I can hook it up to a real tank, those 20L gas the sodastreme uses are too small and a bit expensive

I buy it sparkling, but if I wasn't a principled non-drinker, I'd carbonate bottles of water with a bit of fruit juice and a pinch of yeast.|

5gr of sugar, a shotglass of fruit juice, pleasantly sparkles up a 1.5 liter bottle.

I just got done drinking some Jin Xuan oolong tea from teavivre. FUCK ME!! When you brew this tea correctly, IT TASTES LIKE FUCKING UNSALTED BUTTER!! Yet there's no butter or flavoring in it, just natural tea leaves.

This is what a nice taiwan oolong is all about! Honey whipped butter with floral notes.

Ok, in order to answer this, I first need to go over the 2 GENERAL ways to brew tea.

1. Gongfu brewing (traditional chinese)
2. western brewing (longer steep times)

I NEVER brew western because it releases ALL the flavor at once and it turns out astringent and not that good.

I brew gongfu style always. With gongfu brewing, the flavor evolves and changes over several infusions. You can steep a decent oolong between 6-12 times depending on the quality.

For a standard gongfu session, I use 6-7 grams of leaf material. That might sound like a lot but it's actually just the standard amount. FIRST you "wash" the leaves with hot water for 20 seconds and then you dump the water out. No more than 185F for oolong. This opens the leaves up and gets them wet so they can brew.

After the first hot water wash, I use 100ml of water at 185 degrees F, then I do several steepings with a time sequence of 20 seconds for the 1st brew, then 30, 40, 50, 60, 90, 130, 180 seconds. This is 8 steepings.

Some teas will require a little bit longer brewing times. Shorter if you're doing gongfu for black or green tea. The Jin Xuan oolong is a little on the "lighter" side so you can get away with doing longer steeps.

For the Jin Xuan, this is the time sequence I use:  How water wash, followed by steepings of 30 seconds, 45, 60, 90, 130, 180.

Tea drinking is actually an art form. If you are going to get into gongfu brewing, you should buy yourself a cheap glazed gaiwan from aliexpress. You don't need an expensive fancy one. Get one that is at least 150ml. You'll have to deduct about 25-30% of the volume because the liquid should go below the lid. If you're brewing tea with very large leaf, you will want a bigger gaiwan so that the leaves can expand and get bigger. I use a 240ml gaiwan for my larger leaf tai guan yin. The leaves really expand and get big. You basically want your brewing vessel to be big enough so the leaf can expand and be flat comfortably. The tea won't brew right if the leaves are stuck and can't move freely.

You can do gongfu brewing with pretty much ANY kind of chinese tea, white, green, oolong, black, and puerh, I've gotten good results brewing Indian assam teas gongfu also.

Japanese teas don't do good with gongfu brewing. With japanese teas, you don't want to brew western, but you do want to brew longer than gongfu. For sencha, I do 2 minutes 15 seconds for the first steep. The second steep only requires 45 seconds (because the leaves are already wet and can brew more easily.) and the third steep I do 1 minute. You can get away with a 4th steep but I find that the flavor is too light by then and the amount of caffeine is too much.

For a japanese oolong, I do an initial hot water wash, but then I steep for 2 min 30 sec, 2 min 45 seconds, then 3 minutes. And I use less water each time so the each steeping will have the same flavor intensity.

After every infusion, especially after the first hot water wash, always SMELL the tea. Most of the flavor of tea comes from the smell. And the flavor comes more from the AFTER taste rather than from the actual liquid. When you swallow the tea, your mouth will get an aftertaste "fog" of the tea gasses. This is called "hui gan."
