Hi,
I'm long winded. This is about letting steam out of your PC during its run, or having it be silent... and its affect on the grains inside. Read on if of interest.
I'm pre-sealing my grain bags when using a Presto 23. I've discovered with the help of people on this forum that its important to avoid letting any steam escape from the PC during operation. (if steam is escaping, then water is boiling in the PC and might be boiling in your bags or jars)
SO, I've been very careful to weigh my bobble with quarters and run the pressure well below where it hisses.
And I've discovered that my grains turn out PERFECT. I don't even dry them in my prep and they come out dry. Bags with the exact same prep would be wet and mushy when I was sloppy with letting steam escape the bobble. But now the grains are dreamy.
I have a hypothesis.... If you accidentally boil your jars or bags, you pull water from the grains into steam vapor and it collects as loose water in the jar or bag.
Does this vibe with anyone? Had the same experience?

It's been my experience that following protocol and dialing in the details over time equals perfect grain. And my PC is certainly boiling the water and steam is certainly escaping ( although only slightly). Do what works best for you obviously,but I certainly prefer giving as harsh an environment as possible to my grain inside the PC.

Thats always been my opinion too... with weights I'd run around 16-17 psi with a small amount of steam loss. But now I'm sealing my bags and can't do that. And I'm finding good results that I didn't attribute to steam loss until now.
