GRAIN ACID SOAK TEST
( MILLET )

Pasty turned me on to the idea of sourcing info from the mush fam to test things so I'm approaching anyone who want to help me test this. Feel free to 😎🍿 the thread of you are interested in the results.

My millet tests so far have been uneventful and In a previous millet question thread I seen what you guys were saying about millet being hard to colonize and it made me wonder about the hulls toughness/texture and how it might appear to the mycelium as opposed to oats or rye. (good rye seems velvety to me)

So I was doing research on how to soften the hulls on grains to see if there was a way to work the them into a different state and THERE IS at least for cooking/eating millet.

You work the hulls by adding an acid to the soak like LEMON JUICE, WHEY OR APPLE CIDER VINEGAR.

I'm going to use this recipe exactly for my testing...

Clean PESA wedge (still need to produce this week)

1 cup unhulled white proso millet (180g)
3 cups water
1TBS Apple Cider Vinegar
(since it's the cheapest of the 3 acids given)

Hhmmm I've done 24hr and 12 hr soaks and after sitting for a day they are dry in the jar. Right out of the PC they look like yours but not a day after.

Do you inoculate right out of the PC or do you wait a day or two?

Millet heavy wbs blends get the soak.

18ish-24hrs


Using an acid on a soak is one step too many when it comes to the seed:shrug:

So that jar picture is like 3-4 days old I'm assuming? Still looks really juicy unlike mine.

I wonder if it's the difference between different types of millet. Mine is white proso unhulled

So I soaked 24hrs then loaded soaking wet and then they are dry a day later after PC. What gives with that.

I personally don't see putting a TBS of vinegar to be much of a step if it helps in the long run but I will only be PCing once a week so I can see where big guys would need to refine the processes

Maybe you dont know what dry grain means? Because what you describe sounds perfect to me. I like my millet to sound like a ton of little BBs when I sake the jar.

But the millet IS hydrated. So it's an extra unnecessary step imo.

All that's good advise guys and mine are like bb's too but no mycelium jumping from my agar to my grains. That's what put me on this path.

Is there something else I'm missing??

Mushboy my thinking on the acid soak was to work the outside of the grain to make it more permeable for the mycelium to get ahold of. Not so much about moisture levels. Rye is so velvety and the "choice" grain so I was wanting to get the hull softer.

I will just keep trying until I get it right.

Will inoculate ASAP next time instead of waiting a day. πŸ‘

Imo soft hulls equal mushy grains. Take oats for example.. if you dont load them hone fucking dry on the outside you'll likely have a shitshow.

Got pics of the myc not colonizing/leaping off agar?

I see that happening here maybe with the break down of the hull for sure but have to try the test to appease my curiosity. You don't know until you know. That's what I love about mycology so lab oriented and procedural.

I don't have a pict. I tossed the jar after like 8 days I think. It was a 2nd transfer and looked pretty much ok with no visible issues. Maybe it's my agar game that needs work.. that's an under statement ! LOL

I will do another "regular jar" and an acid soak jar side by side and see what happens.

EDIT
My wedge was about the size of a quarter and I buried the wedge about 1 in under the top of the grains.

Until you got everything down I wouldnt shake/bury the wedge.

Just let it sit where it falls. Watch the morphology and all that shit:thumbup:

Millet works fine for me. I do an overnight soak then a ~30 min simmer. Once it is breakable by fingernail, it's good to go.



Millet is second from the right and colonizes at a comparable rate to other grains shown (wheat, barley, and popcorn).

Overnight hot soak.

Boil water, add millet, drain 8-14 hrs later and load wet to the touch, load 1/2 full and they will be 3/4 full after the PC IME


If your wedge isn’t jumping off maybe its not the millet? :shrug:

Well that's different because everyone else is doing a soak and PC without a simmer.

Might try that too on the next PC round just for experimentation sakes. I do love a good controlled experiment.
