How are you going to inoculate them without holes in the jar lids?

You really wanna have the holes premaid before steam sterilizing....just wrap the lids with foil before you boil to protect the substrate.

Im not really the one jar will properly steam-sterilize without innoc holes on the topic.
The pot will work but u need something on the bottom of the pot to protect your jars from damage. In a pinch, people use balls of aluminum.

You should prepare the jars as the way you are going to use them. In theory you don't need inoculation-holes, but you need holes for gas-exchange during myc.growth. If you want to pasteurize the substrate with this pot, you will need to use a tek called "tyndellization", which basically is steam-boiling the jar 1 hour, let it rest for 24 hours, then repeat for a total of 3 times.
Edit: For clarification, holes for GE needs to be sealed so ONLY air can filter through. I made lids with tyvek-paper.
