Inoculated 6/12/19. Couldn't get it to brown up for over 5 months. Almost gave up then put it into fruiting a couple weeks ago.

Looks good. 5 months is about right, depends on the strain and temp. Which strain is it?
Also, what was the substrate here? They look great and I've never been able to get tamps to fruit.

I don't know the variety, it was a trade simply labeled Shiitaki. Sub is straw/hickory fuel pellets/cherry chips. Temps 70-74 only because that's where I need my room for most other grows.
IME tamps are the easiest of exotic actives I've worked with. Subs have varied from straight coir, 60/40 coir/hpoo or black kow. Very forgiving just need casing, humidity and plenty of FAE. They do better with a little manure of some sort but could probably do just as well with straw.

Any thoughts on how to enlarge cap sizes on tamps for larger prints?

Wish i had a good answer for that. I feel I do everythong right and have very healthy fruit but I've seen grows with bigger caps. Genetics?

Is that the same as cubes (5 to 7 qts. of spawn per brick of coir cased with 1% lime in coir)?

How big is your brick of coir? I got some big blocks from Wal-Mart $2.50 for a big block labeled expandable soil. For a 6 quart dub tub I use a 1:1 ratio
