Best Most Healthy Mushrooms for eating/cooking?

I am very interested in growing edible mushrooms for health benefits, not looking for any psychedelic effects, just a good source of minerals and vitamins. I love cooking and want to grow my own mushroom food, just like I have in my backyard garden.
From my research I have compiled a list of the most nutritious mushrooms, just wondering if anyone could add to the list below. Thanks for any input.
Here is what I came up with on my wish list:
Reishi, Shiitake, Oyster, Porcini, White Button, Maitake, Shimeji, Chanterelle, Black Truffle, & Chaga
Could anyone point out which is the easiest and fastest to grow?

I would suggest oyster to start with they are the easiest to grow. There is going to be some start-up costs. You will need a tent to grow in. An ultrasonic humidifier, Timer or humidity sensor, Pressure cooker, Whole oats, Millet, Hardwood fuel pellets, Soy hulls or wheat bran and some fans. I am sure there are a few things I left out but that should get you started.
I would buy spawn and not mess with syringes. Aloha medicinals Elma is a good strain to start with. Aloha Medicinals has already isolated the strain so you know you will have a good fruiter. It is worth the money to buy spawn.

Yes, I am very interested. This is exciting, as in a tent, can I keep this indoors? I was thinking I could grow in plastic storage bins?
This is a new project for myself...

Plastic storage bins are not doable for edible mushrooms. Edible mushrooms need a lot of FAE (fresh air exchange). I grow indoors I have a 4 x 10' room that I sealed and waterproofed. I was talking about something like THIS. or THIS Which I would leave indoors You can also build your own with some wood and some 3 mil plastic.
You will need 3 of these to keep the humidity up. I don't know the quality of these but at under $6 if it goes bad no big deal. I would keep one as a back up just in case one goes bad. You can replace it without haing to wait on one and drying out the mushrooms...

Wow! Thank you so much, I did not even know walmart sold those mini greenhouses. I have been looking for something affordable just like these for my plants!!! Crazy I was asking about mushrooms, but now I am just going to buy some of those greenhouses for my plants 
Back on topic, I definitely do not have room to bring one of those indoors. It would be total madness. Can I grow them outdoors? It gets very humid where I live in the spring and summer.

That greenhouse is not that big But if you don't have the space you could use a spare closet. I have even seen people use shower stalls. If none of that is feasible you could definitely grow them outdoors. I have never grown outdoors so I probably wouldn't be the best person to help you for that one.
I looked at amazon and found a 2' x 1.5 greenhouse here is the link you could grow from 6 to 12 lbs of mushrooms in it every week...

I just wanted to grow enough for my own personal use. Do you have any good references for growing outdoors? I am basically out of space in the house. I have some small grow boxes for plants, but this would be total overkill. Thanks for all your help!

I know nothing about growing outdoors. I am sorry. If I was going to grow outdoors I would do it the same way as an indoor grow. I would buy some bags and some fuel pellets some soy hulls if you can find them. I then you just place the bags in a place out of the sun and have a mister on a timer wet the ground around the mushrooms a few times a day to keep the humidity up. but that is just my thoughts. I am sure there is a smarter way. You can also use straw to grow on. But that was to much work for me with an indoor grow. I would look at these videos and see if you can come up with some ideas...

You will still need a PC. I would get a 23 quart presto. You will need some grains also. I would just start off with whole oats a local feed store should have them. I get a 50 lb bag for $15 I bought some yesterday. I will send you some video's in your private messages for you to watch. Good luck and if you have questions you can always PM me.

Not sure what you have lying around but, you can also buy those plastic HDX shelves from I think Home Depot or Lowes, the 5 shelve units and wrap it in plastic 9'x12'. If you have some of those shelves already. Even those metal shelves those places sell would work too. But the plastic ones don't rust, obviously.

Thanks for the tip, I honestly thought I could grow food under my bed like with magic mushrooms.

If you have a backyard, check out log cultivation. It isn't quick, but it might be the cheapest way to grow if you already have the space. And you could try 'Lipa tek', pouring boiling water on fuel pellets, and using bought spawn. And just try to open air fruit them in a shaded place in your backyard.
Easy way to start, and get addicted and have everything get out of control haha.
Some of the species you've mentioned can't get cultivated btw, at least not without taking a mayor gamble by inoculation tiny saplings and waiting a decade or more.

I have plenty of space in my yard for logs 
At the farmers market I seen someone selling logs with mushrooms already growing on them. I may just buy one of these to get started. Thanks for all the advice.

+1 on the Lipa tek. It's what I've used on pretty much every gourmet mushroom I've grown. Fuel pellets are super cheap and easy to work with.

Oyster is one of the most popular types of mushrooms to cultivate. I have tons in my backyard and I usually have them as a healthy snack. I use an air fryer to cook it and then add some flavorings, but the plain taste good as well.
