D3monic Cooks * 8
    #26413502 - 01/03/20 02:22 AM (1 year, 2 months ago)

This thread will serve as a dumping ground for my food porn. I do most the cooking for the family, I enjoy experimenting with recipes and exploring flavors.

Here's a tonkotsu ramen I made with a shoyu tare. Turned out amazing.

Cherry smoked pork belly, 6 min marinated egg, shallots and scallions, butter sauteed shiitake.

Shoyu tare was: Ginger, leeks, scallions, garlic, soy sauce, mirin, sake, rice vinegar, dash of brown sugar, pan fried pork belly and a few other things.

Also some mayu (blackened garlic oil) and some smoke chili oil I had made from cherry smoke thai peppers.

Broth was made from trotters, chickens feet and wing tips, leeks, onion, ginger, shiitake mushrooms and garlic rolling boiled for 18 hours.

Another one my favorite dishes is general tso's.

I'll be making more ramen this Saturday. I'll try to snap a pic or two.

and add some habanero powder for extra heat

Birthdays in our house I make what ever you want. I hate spaghetti so the wife and daughter both usually pick that. Even if I don't like it I don't mess around though. San marzano tomatoes, panchetta, ribeye, cherry smoked el scorponero (my own pepper hybrid) typical shit, red wine, mushrooms, bay leaves, sugar ect... I always forget to write the recipe down and then swear up and down it's the best sauce/gravy I've ever had.

Going down saturday. I usually make noodles from scatch but saturday the only day I have off for the past two weeks and won't have the time.

Made some pot roast in the instapot. Only second time using it but they are pretty nifty.

Browned top round and brisket.

Sauteed onion and garlic till soft, added sliced carrots and celery.sauteed for a few more mins then added red wine, chicken stock, oak barrel aged balsamic vinegar, brown sugar, soy sauce, thyme and salt and pepper to taste.

Insta pot on pressure cook for 75 mins. Pulled meat and added some cornstarch to thicken gravy. Turned out killer.

Made a couple small batches of mustard, this one's really popular. Ingredients: my favorite beer Lizard King pale ale, apple cider vinegar, Orange, pineapple juice, honey, ginger (lots), shallots, brown sugar, kosher salt, fresh thyme and rosemary. Has a nice blend of black, brown and yellow mustard seeds for a little kick.

Orange honey ginger mustard

This batch I made for my daughter as she misses a maple mustard she used to get on a sandwich at panera. I've never had it but I gave her a taste without telling her what it was and she loved it. Got so excited.

Same mustard seed mix with blueberry maple stout, Bells double cream stout, apple cider vinegar, maple syrup, brown sugar, shallots, garlic, kosher salt and a dash of malt vinegar.

Maple basil stout mustard

No not like I would a hot sauce. I just soak the seeds in the beer and vinegar overnight and then add rest on stove as I gently heat it up and then can it

You can use all dark soy sauce instead the dales marinade. Even regular soy sauce is acceptable and will still produce the best general tsos you’ve ever had.

Even crispy reheated in the microwave

My sister raves about her air-frier, I have never tried it.
how would you compare air-fried wings to deep-fried?

My oven baked wings are OK. Very tender, but they lose some (moisture) mass.

I prefer air fryer over deep fried, my only qualm is 1. Can’t do battered (which I prefer no batter any how) 2. Volume. Cant do a lot in the air fryer but if you’re frying wings at home you can’t do a lot in the pan at once anyway.

I’ll toss mine in a mix of kosher salt, baking powder lemon pepper and some seasoning and let air brine a few hours in fridge to dry out the skim though not really necessary with the air fryer. Patting dry suffices. If I’m feeling it I might give them a 20-30 min smoke over cherry for the flavor and then air fry.

I’ll air fry all the wings (usually like 3-4lbs) then once they all cooked I’ll toss in desired sauces ( we like varieties) then put back into air fryer for about a min to heat back up and bake the sauce on a lil bit. Also don’t mind just lemon pepper and dipping.

Yea with mckormicks brazilian steakhouse marinade, lime juice and topped with cotija cheese and chimichuri

The corn I mix lime juice, salt, pepper and mayo, brush onto corn and hit with some smoked paprika. Grill till perfect, shave off the cob and toss in some more lime juice and cotija cheese. I don’t personally like mayo but it all cooks off/in. Think of it as butter that stays on better.

Battered actually can work pretty well. I use egg, cayenne/spices, some flour and corn starch, then just coat it with a little sprayable oil and they get nice and golden crispy. Sometimes you just need to add a little more batter and oil the first flip if some falls off.

Made my first risotto last night, turned out really good. Organic chicken broth, shallots, garlic, white oak shiitake mushrooms, peas, scallions, guyere, parmesan and brea cheese.

Also some Brazilian marinaded ribeye

Ideas for next time:
risotto is filling enough to be the main dish.
Garnish with asparagus, peruvian cherry peppers, parsley and prosciutto florets.
More mushrooms and retain some for garnish.

I have been craving Ramen.  How did you do your broth? I'm moving so going to be like 2 weeks to get settled but Ramen is high on my list, seafood chowder also.

I use trotters, pork necks, chicken feet, rotisserie carcasses.. what ever I can get ahold of. Aromatics I typically use leeks, shallot, onion, ginger, garlic, shiitake and sometimes oyster mushrooms, maybe celery ect.

Kenji lopez breaks down a good tonkotsu prep here

When I get home tonight I’ll share my shoyu taré recipe.

For toppings I like to make fresh mayu, chili oil, I’ll lay a pad of grassfed butter in the bottom of the bowl so it melts when you pour in the broth, scallions, shiitake that where sautéed in butter with salt n pepper and what ever other kinds of veggies I’m feeling.

I make a 6 min egg. Bring water to boil, use a needle or thumb tack to punch a small hole in the bottom of your egg. Lower into boiling water and spin with chopsticks for first 2 mins. After 6 mins up shock with cold water and peel and soak in marinade overnight.

The eggs are probably my family’s favorite part.

Thank you, your Ramen pics definitely stoked my desire. Looks like you are taking your broth seriously,  as that's kind of the main deal.

I worked at a Japanese place for awhile that was based out of Tokyo and had authentic Japanese chefs and the Ramen there was awesome, that place had some amazing dishes.
