Are you talking about VFD controlled motors where they change the input frequency to control motor speed? I don't know if drones use this, I would think not since they are DC, but a lot of equipment uses DC 3phase motors with AC supply. The VFD converts the AC to 3 phase DC.
I don't know exactly how electronic speed controls work in RC vehicles, I think they manage switching speed of transistors but I am not really versed in this area. I know they are solid state these days, they used to use a servo and a rheostat, which is a terrible way to control electric motor speed.

It's complicated, but we know the batteries are DC, we know they use brushless DC motors. So with switching transistors in the ESC (note I used the non abbreviated term in my previous posts) they manage the speed of their motors. I don't think they use AC as you proposed, but I'm not an electrical engineer so I could very well be wrong.

When it comes to induction, the direction of the primary current is irrelevant. The waveform is what matters. If you input a DC sine wave into a primary coil that goes from 0 to 100 volts, the induced current will be exactly the same as if you input an AC sine wave that went from -50 to 50. When the primary current is growing, the induced current flows in one direction and when the primary current is falling, the induced current flows the opposite direction, all with a 90° phase shift. Induction motors take advantage of the fact that the primary electromagnet is 90° out of phase with the induced magnet.
