Shiitake kit--too crowded?

This is a commercially produced shiitake kit I started 10 days ago. I'm wondering if I should thin them/harvest some to allow room for others to mature? Are these mature when the cap has started to flatten out?

I contacted the seller of the kit, and was advised to harvest the shiitakes now. The larger ones I'll hope to use to make some spore prints, and some agar cultures from stem tissue. Many of them I'll attempt to get dried out for later use. I'm guessing there will be close to a pound of fruit, and I'll report if it's much different.

Producing a 2nd shiitake flush is quite different from the psilcybes, and involves a 2 month dry rest of the block, followed by a long dunk, and chilling in the fridge. More later....

I harvested ~680 grams of fresh little shiitakes from the grow log just now. These are going into a slightly warm oven, hopefully to dry.....down  to <3 ounces!!??😲😲😲
