It just kind of depends on a lot of different factors. The microclimate at the surface of your substrate is more important than the RH in the whole tub. If you have more air you'll need to keep things wetter. If you have less air, not as much. The main pinning trigger is evaporation of water at the surface of the substrate so basically your trying to keep it moist enough and have enough FAE on the surface so that your getting evaporation off of the surface as consistently as possible. Without things Beeing soaked or drying out. I think the dark pin caps are a sign of to much moisture. Looks kind of weird but idk if theyre actually bad to eat like that. I'd wait for someone who knows more about that type of thing.

If the mushrooms are bad the spores may possibly have bacteria or something in them-they could pick up stuff like that just from the air though-but you can clean anything like that up on agar.

So in theory I can transfer cakes to coir, and this process can be repeated with other boxes once the shoebox has yielded.

The TEK explains that you can shred cakes and mix it into coco coir but I'm not sure you should do it with your cakes now since they've started fruiting. I'm not saying not to, I just don't know how that would work.
If I understand the second part of your question, you let the shoeboxes run until they're done. There is no transplanting into another box because once the myc is worn out, it's done and time to throw it out. If you leave them to see what happens (and contams don't wreck it first) you're later flushes will have less numbers but much bigger fruits which is cool to see

OMG dude, I understand the desire to automate shit but automation isn't for shrooms. The only thing you want is a light on a timer. Get rid of the humidifier, fan, and all those holes are waaaay too much.

I can cover up those holes with gaffer And cello tape quite easily. I suppose I can use the show box tek with loads of little boxes, left over from takeaways. I’m tempted use black liner on the bottom, to stop bottom pinning. Would that be of use do you think?
