Home whiskey distillery

Does anyone know some good recipes for making whiskey at home? I am from Serbia and here we make a lot of alchohol drinks of fruit ( rakija). But i am intersted to make some homemade whiskey distillery,and i found a lot of recipes on internet and i dont know what recipe is really good. I'm most interested in Scotch whiskey.

IMO making grain mashes is a pain in the ass and not really worth it. Most of the time its going to come out similar no matter what when the still spits out 170+proof
Spirits that are that high proof tend to not taste like much other than alcohol.
Sugar mashes are way easier.
My personal favorite recipe is: Juiced apples (they don't have to be pretty) about 6 lbs of sugar some quality brewing yeast (bread yeast also works fine) Mix it all up, throw it in a 5 gallon bucket and let is sit in a room with a stable temp for 2+ weeks.
If you have a decent still Boom 170+ proof white whiskey.

Doing something like scotch whisky would take a great amount of time effort and money.
Much of what gives scotch and many other kinds of whiskey it's color and flavor is the barrels they a sit in, often for years.
Under federal law Anything labeled straight bourbon whiskey must be aged for at least 2 years and have no additives.

you are basically just adding toasted oak sticks to white spirit when making your own - you can add 1 tbs of olroso sherry to give it more depth but its still a waiting game. if you really want to have a go do some research on toasting oak sticks correctly (lots of vids on youtube) i also agree with buck RE using a sugar wash instead - its a hell of a lot less messing about than with grain washes (unless you want to legally sell the stuff in which case you need to use a grain mash iirc ) )

I just did some rakija, also Serb. I distilled at to high of temps though. I've done some corn mash moonshine before and it was right around 140 proof.
172-189 seems to be distilling temps for rakija, i took it way to high and made my cuts way to wrong so I'll end up doing a second run to get it more proper.

using a small home still you are always better off doing 2 runs (stripping and spirit run ) - once you get alchohol dripping from the condenser just turn your heat source right down - slower=better (easier to make cuts ). once you use the same still a few times using the same washes you can pretty much leave it alone as you know how much foreshot to chuck and when to run it too before you hit the tails)
distilling temps are the same across the board , all it means if you run higher/faster temps is that you get smear between heads/hearts/tails which make it harder to split them.
when doing 2 runs (stripping /spirit) - the stripping run i do faster and just pull everything down to 10% after chucking the heads /foreshots , the spirit run is done slowerfor better control.
the stripping i end up with is about 60% , this is kept in demi johns and a few tablespoons of bicarb is added /shaken to each one and its left to sit for a few days. this stripping run is then mixed 50/50 with fresh water and redistilled slower taking it to around 90% , i then use this calc to work out how much water to add back for whatver im making. http://www.aussiedistiller.com.au/xcalcs.html
when making high oil drinks like absinthe /raki /gin the % needs to be higher to hold the oils in solution overwise you end up cloudy ( that why when you add water to absinthe /raki etc it goes cloudy- the oils are dropping out of suspension as you lower the % by adding your mxer/water - its called a louche )

I am a newb with cultivating mushrooms and now I see this and say to myself. If I can grow fungus I can brew whiskey.
