I mixing a tub a day and threw all the coir into the first tub without saving enough for a casing layer. Can I add it while it's still colonizing without anything consequential happening? It's only a day old

In my opinion:
Skip a full casing layer and just sprinkle a little coir over the exposed grains on top.
-Or-
Leave it just like it is.

Wouldn't leaving it as is make maintaining surface moisture a bit more tedious?

Nice looking jars!
Did you PC the jars with the PP lids on them? I've seen those lids on Amazon and wondered how well they might work, because they don't seem to be designed for canning. And, were the lids on tight during cultivation? I wonder if you had any air exchange in the jars?

I suppose it could. I don't run into any issues, but everyone has their own methods. You can add a casing if it makes you feel more confident with your surface conditions.
Edit: Just wanted to clarify. "I don't run into any issues" means I check in on my grows everyday anyways, so I just mist when needed.

I use the same lids and I leave them slightly loose for air exchange. PC with lids on.

If theres no harm in adding it now. I will. The lids are easy to use and dont deteriorate which is nice. Down side is that they expand when they go through the pc, so I have to secure the lids before I take them out. Sometimes they warp and practically cross thread themselves. It looks like a weird oval shaped lid when it happens and it bulges. Setting the lid (turning it counter clock wise until it thuds/clicks and is level) to line up threads prevents this from happening as much. They make little rubber gaskets for these lids I havent tried yet. I just dont wanna deal with an extra piece of lid flopping around inside my sab so I cope. I dont have working hands anymore since I had a longboarding accident n lost a majority of my muscle starving and waiting to recover. Definitely had my hands chewed up from the regular lids a few times.

Would this be a better idea? Let the myc develop then add a casing layer. Prevent the myc from eating the casing layer?
