Huge Oyster Mushrooms

Oyster mushrooms' scientific name is Pleurotus ostreatus. We really like to eat these! Oyster Pleurotus ostreatus the oyster mushrooms. Central time zone United States of America.
Found these on an old tree right in my grandparent’s backyard.  They have been growing for 5 days to 2 weeks I’m not sure.  Not pretty big since I last had seen them however.  I ate a few that I roasted over the fire last week or Sunday night. 
Is this a good example of Pleurotus ostreatus?  Or a different subspecies?  They look like they are still good. Are they because I have only tried a few small ones like 3-5? More growing on the other side of the pecan tree.  Lost my camcorder misplaced. Just wanted to show of how huge these are is that normal? HahaPleurotus ostreatus.

They look like oysters but you can make a sport print to be sure.  The print should be white so use black paper or foil to print on.  They look a little old but some of them might be edible.

Do you think they will grow again? Another generation of oysters? Or is that called reflushing?

Frankly though I'm not sure I have the appetite for one of these whole.  I tried 4 small ones that looked a lot fresher and less yellowed than these.  And I do try any wild mushrooms I've seen I know better. Out of my mushrooms experiences I think these look a little water-logged and wet. Plus the yellowish yellowing??? What's the yellowing mean?
Just curisouity are these for taste nutrition what benefits of eating these?  Protein maybe? I can see a mushroom like a protein shake LOL

Someone please correct me if I am wrong, but what I would do is knock all the old mushrooms off the tree/cut them off and discard any you don’t want or even transplant them. New mushrooms will form from where you cut them as long as conditions are good.
Ya those look like some very big and very nice oysters you have there!
