A lot of pressure cookers have little ring/cap things on top. Just the cap is 10 PSI, the cap with the ring is 15 PSI. When this little doohicky starts whirring with steam and pressure it means the pressure has been attained. At this point, you simply drop the heat slightly and maintain the pressure.

Dr.Mambo is right. The majority of small pc's come with just the weighted pressure regulator. 15psi is best because the temp is about 250deg inside which makes the time inside for the jars 60-90min,whereas the 10psi is a lower temp and needs a little longer to be sure(around 2 hours or so). Start your time at the point where the weight starts to jiggle. By the way the pc's with the guage are the "canner" type and typically have larger capacities as well as a much larger price. --I think a good can go as high as 250 bucks!

You would make a great mycologist,Mykey, but you wouldnt make a great farmer!lol

A Canner uses steam and heat to "Can".
A cooker uses pressure ,steam, heat, to "cook".

A canner has no wieght or gauge.
All cookers have a pressure regulator(being a weight or gauge) of some sort along with a "POP OFF VALVE" incase of emergency's.

Just keeping you on your toes!

A pressure cooker will can too, and pressure canners DO have a gauge or a weight.

Also, I don't think you NEED a PC with a guage.. I've got an All American one, and they tell you to rely on the weight regulator; the pressure guage is a backup and could be innacurate.

You got me doc! What is really sad is that I grew up on a farm! I was good at the growing part,of course, and the harvesting, feeding the cows and just all around working my ass off, but,as for the canning,my one experience without my Grandmothers help ended in green beans all over the kitchen and a look on her face that I will never forget!! LOL

Thanks for keepin me on my toes doc,and for sparking fond memories of my childhood! HA! HA!

I dont mean to be an ass,but I have been picked apart too much tonight!

I will explain this in more detail as to my statement-I didnt realize that evr time I have made a comment on a given topic that some body starts nagging(no offense)and calling me out,and then I having to explain in further detail to render my comment valid.

Yes,A pressure cooker also cans-thats obviuos if you have ever used one.
Yes pressure Canners also use wieghts,BUT,a CANNER,does not!

There is a difference-go to wally world and have a look!

1 -is a simple pot, rack, and lid-no wieght or gauge and it is a-"CANNER"!

2 -is a "Pressure COOKER/Canner combo(it does both)and they have a wieght!
other "pressure cookers/canners"(more expensive brands and models)have the gauge type regulator.

Happy now?
I dont mean to be an ass but please-I had merit in what I said-I just didnt feel up to doing all of this to get my point across, copish?
