How are my surface conditions? Getting side pins

Hello,
This is my first grow. I followed bod's bucket tek using 100% coir and then spawned to shoebox tek, immediately to fruiting conditions with the plastic bag over. I also started using a 5500k led light 12/12 after I thought it looked fully colonized.
Everything seemed to be going pretty great (I'm currently 14 days from when I mixed coir and spawn), it colonized pretty quickly from some brown rice spiderman tek and then I started seeing what I think are hyphal knots..and now pinning on the sides.
I think I may have had an issue with my field capacity of the coir, it being a little too dry. The sides of my shoebox have had condensation the whole time, and yesterday was the first day I misted, as I read that the top of the substrate was a little too dry, and that's why I'm only seeing side pins. I was a little concerned about spraying and fiddling with things too much so I kind of just left it alone, but now I think the top is stalling from poor substrate surface conditions.
I just wanted to post some pictures and get some feedback. Will this be ok still? What should I do? I was nervous to mist it last night, but I just did a few sprays and kind of moved the bag up and down to get as much FAE as possible.
Edit: Update to add that the shoebox is in a interior closet and we keep the heater at 68. So could temperatures being too cold cause issues?

Your surface looks fine, it’s knotting up nicely. Next time tamp your edges and corners down more and the sub won’t pull away from the sidewalls quite as much, preventing side pins. No need to move the bag around, the holes you should have poked in it will give you ample FAE. If you really feel some kind of way about it, you can give it a couple few mists from a couple feet above, cover it up, and let the magic happen!!

I'd give it a light mist at this point. Lookin good though

Yeah, surface looks good, mist, lining the sub with a trashbag will help with side pins as the bag shrinks with the sub cake

Thank you all!!! Hopefully the misting I did yesterday will be good. These pics were all pre-mist.
