some jars done some not, what to do

What can I do if some are 100% colonized and some are like say 75

im a newbie here but i think i know how to answer this question...

If some of your jars are 100% you want to get them in the fruiting chamber asap. You don't want
to let them overcolonize. As for the jars that aren't full colonized obviously wait
until they are ready then put them in the chamber too. The fruiting may be off by a day or two but
that really isn't a setback. The most important thing is that the jars that are done start fruiting
otherwise it becomes easier to contaminate or ruin the cake.

  Ok infinite420,I am afraid you are giving a little missinformation here so I will straighten it out if you dont mind.

  Once the jars fully colonize they are much more contamination resistant than uncolonized cakes. The myc can do a pretty good job of fighting off contams at this point.
  Having said this it isnt a problem at all to let those colonized jars wait to go into the fruiting chamber. I dont see any reason to wait on the rest though, and you are right about the fruiting being staggered in relation to the time of harvesting.
  Letting them "overcolonize" isnt a problem at all! In fact ,it is actually a good idea when fruiting cakes to let them sit in the inccubator for a week or so after they are done to let them fully consume as many nutrients in the cake as possible before initiating the pinning stage. This is because the lack of nutrients,as well as the addition of light and the reduction of co2 ,are all triggers that bring on pinning and subsequent fruits. (You can ,of course,go ahead and put them in the fruiting chamber if you want to--It might just take a little longer to pin.) IME a few days past 100%is just fine.

Oh yeah,I forgot to mention that if you are planning on storing the fully colonized jars for more than a couple of weeks you should put them in the fridge(NOT THE FREEZER)
Also it might be a good idea to dunk before going into the fruiting chamber in this case to rehydrate the cakes since they will likely have dried out some while they sit.
