why cant the temp be higher than 185C?

im pastuerizing some poo right now and the temp is getting really close (182) but im not letting it go over, why is it so bad if the temp exceeds 185?

how bad could it be? would the mushrooms have lower yields/potency or something?

It will colonize slower and your chance of contams goes way up. Turn up the temps and give it a try and let us know how it goes.

I think its safer to set a limit lower than 185-like 180'f,that way incase your method of pasteurizing and thermometer are off you might still be safe.You are at 182'f right now,then you are good to go!
170-180'f is a safe proximity I hope,If I'm wrong please someone correct me!
