Enter fruiting stage or wait a bit - what would you do

Hi, my grow box with ventilation strip is pretty much fully colonized except for a bit on the bottom. Thinking of dunking and switching to fruiting stage, especially because I'm starting so see some fungi 'piss' but I'd like to know you opinion. The mycelium blanket at the bottom is quite thick and grows pretty slowly. Should I wait until all is covered? No contaminations so far. These have been colonizing since the 1st of November.

Yeah I know uncolonized substrate is prone to contamination. Problem is I don't know how far the uncolonized bottom goes 'into' the cake so I'm afraid I might scrape away too much which will impact my yield from subsequent flushes. But that's better than to throw it all away. I'll dunk 24 hr in demineralised water anyway. I'll have those grow bags with ventilation strips so they're directly shielded from the open air.
