First off, your substrate looks extremely contaminated with trichoderma and other molds.

Yes the wavy caps are from a water logged substrate, but aren’t bad. You don’t need to mist as much or bottom water if you have been.

Contamination. Its hard to tell if there's trich there, hard for me to see. I often get this type of contam, I personally think it is bacterial contam that weakens the sub and leads to other growths gaining a foothold more easily. Often times these kinds of caps are a bit fuzzy, a bit discolored. Sometimes when harvesting them the stipe is already bruised looking inside.
I take a bit of time when discerning which of these to keep. I personally beleive they are fine to eat, who hasn't eaten a bit of mold on some bread before.

what variety you growing? i've recently seen ESS in pic of day and caps look like that normally, pretty damn cool too

It’s definitely not contaminated as there aren’t any discolorations and anything that does look discolored are just from the spores from the first flush as it was pretty dense. And the splotch spots is just the myc recovering from the mushrooms I removed it’s still smells fresh like mushrooms no contaminations

mazatapec, very cool, not a variety im familiar with at all tho. bet many responses would have been a bit different had you included up front it was second flush as well, i was convinced what i was seeing was nastiness about to go green on ya- now appears spores dropped and stump spaces as you mention late. not much to go on and looking at reg date and post# assumptions get made, try bluf more (bottom line up front;)
interested to hear responses on new data, imagine it still be over wet sub causing curly cap like Stygian mentioned. maybe bacterial sub is now taking over having been better treated environmentally (soaked sub) than myc can handle being in and just now showing best on caps bacterial 'blotch', as its called (idk if yours is even related) can really ruin caps/fruits it gets too far along.

That thing is definately bacterial, and I don't say that often. Can't you see the brown/yellow splotches along the base of the stipe?
