Been making my own pizza

Making my own dough, did this twice.  First time was a bit messy.  Not enough flour, so sticky and too much olive oil.  It was gooood though.

Second time making dough and man, just gets better and better.  Bought a mozzarella ball, mids sauce and been using mushrooms.  Last pizza was my second dough with leftover Italian sausage and green pepper mids pasta sauce. 

Yesterday bought 2 jars of mids pizza sauce.  The other half of the second batch of dough is in the fridge, been there for a couple of days.  Gets good when dough is old in the fridge.  Sorta more boozy.  The dough puffed up a lot too.

I bake the pizza in a steel pan that is much like cast iron.  I have a cast iron but it's grated for meats.  The steel pan is my go to for potatoes and pizza, sometimes biscuits.

Tried first using just tomato sauce barely doctored up.  There is no comparison to good sauce.  Aldi's shredded mozzarella cheese isn't very good either.  So on with the mozzarella ball.

A little cheddar on pizza is also very good.

You are already onto the best secret in great pizza dough, let it sit..  Im not just talking about letting it rise but you need to let it get gassy and smell like alcohol.  Best way is to first let it rise twice, punching it down each time and then roll it into a ball, wrap tight in plastic wrap and put into the fridge to let the yeast slowly do its thing, at least 24 hours.  When you cook this it will make a crispy and chewy pizza and the flavor is 1000 times better than fresh dough.

If you can find REAL canned SanMarzano tomatoes to make your own sauce with you will never go back to anything else again and eat only pizza for the rest of your life.

I've lived above 2 pizza shops for over 7 years.  First shop said I could have anything from the lunch buffett everyday for free.  Second hooked me up with buy 1 get 2 or 3 for free.

Beer and pizza go well together.  Forgot to mention I think, I bought some whole wheat flour.

No idea what the second pizza shop did for a crust.  It was crisp, chewy, sorta drier than mine.  He was a real Italian American.  Probably would still be in biz if the landlord didn't pass and the buildimg sold.  Hell, I'd still live up there.

Now the building is high end, apartments up top and a fancy steak place downstairs.

I thought about building an earth kitchen if I won lotto money and got land.  Rainbow kitchens at gatherings can be neat.  Have had the worse gathering food to very good.  Krishna kitchen has good food .

Fully understand, My brother made a couple of pizzas in the past but we think our oven does not get hot enough. From what I understand you need to use an oven that can at least reach 500 degrees F.

420F does pretty well.

I watched a video where the guy baked it on-top of the stove for 8 minutes.  Then he broiled it under the oven broiler at 500F to get it 'perfect'.

It's not hard to make great pizza pie, it just needs good ingredients and cooked.  I haven't tried 500F yet.

Just whipped up a batch of Whole Wheat Flour dough.  Sooo much easier to work with.  That and I'm getting better at making flour.

Didn't even measure anything out and it came together so quick and easy.  The texture is great.  Curious to how it rises.

Tonight I'm using the mozzarella ball.

Best pizza ever.  Lifted it out of the pan, on the clever knife.  Then it flipped over onto it's toppings.

Made the best of it.  Oh well, there will be other pizzas.

Sure did bake nice at 500F.  Whole Wheat Flour, Mozzarella ball, good sauce.
