Am I picking these too early?

THis is my first time so bare with me. I picked the ones with open veils but it left a lot like whats pictured below. When I pick some mature fruits I get some pins that come up with it PLus I've these left over that look immature. Am I doing it right?

You're doing great! You can wait a little longer until harvest. The veil will start to break apart from the stem (you'll see it start to tear). At this point, you can harvest. This maximizes the size of the mushroom while still preventing the spores from dropping.
Don't worry about the pins! You'll inevitably get some of those when you're picking larger fruits.

Get a pair of sharp scissors so you can snip the big ones and let the pins develop

Honestly... if this is you're first grow, good job, mine definitely looked worse. Two things: 1.The pins are a bit small, but I do not think they will grow larger. The reasons for that could be many. I would say poorly pasteurized mix. I say this because I see two green spots on your substrate and the walls of the box seem pretty dry.
Keep at it tho!

I don't harvest anything that hasn't fully grown and the veils opened unless there's substantial contamination and no further growth is expected.
What you have pictured that you harvested had a ways to go still.

They prob had another day or two to go but you didn’t miss much. Just pick out a couple to watch and leave them alone so you can learn how they grow and then decide when you want to pick them.
The ones in your picture would’ve grown a little taller and the cap would spread out flatter but it’s not a big deal unless you want to collect spores.
I also agree with getting scissors or I prefer a scalpel or sometime similar.
Just for reference here’s one of my grows at about the same stage as yours

And this is like two days later

When the caps start to turn lighter they’re close to done.
