Why is Tub-in-tub incubator considered an outdated tek?

NorCal and cheap. Our house is cold and dry. After not having growth in some jars for a month, I built a TiT incubator.
In 24 hours since moving jars to incubation tub, I've got almost as much myc growth as the past few weeks. I touch my jars now and they feel normal temp. Not hot, not cold. Prior to this I'd pickup a jar and it felt cool to the touch.
Is there any reason not to use an incubator when my house sits at ~65 degrees warmest and unknown coolness?

Why not just raise you room temp to 70? What temp is the incubator holding?

I have a 5 bedroom house and prefer it cold. So does my wife. It's significantly more expensive to heat my house than it is to plug a 50w aquarium heater in.

I use these and they are so effective that I dont see a bump in my electric bill. One regular bedroom on setting 2 and its warmer than what you need. My house is 66f

I also use my Chamber of Secret Light Box (see signature link) in another bedroom just for fruiting. Temps in my chambers are 2-3f warmer than the house temps 👍 I use them for incubation too. Temps stay around 72f average.

You get more contams when you incubate. But 65F is pretty cold.
Not sure what your incubator is like, but the best way to incubate is to put it in a warm room.. Closets work great and are cheap to heat.
You can build a little closet like room out of 6 pieces of rigid styrofoam insulation and tuck tape . Room for shelves and a little space heater

These are $19 at my home improvement store
1in thick

I have 4 of my light chambers stacked in a closet and my temps average around 74f which I feel is good for spawn.

Incubators are outdated in general. As mentioned, they promote growth of infections.
However, incubators are useful during a certain season of the year: Winter. In winter, indoor temps can get pretty cold if u conserve electricity/natural gas/wood. In this case, a warm incubator is useful. Just make sure it incubates to around 74F-77F. Do not let it get to 80F or above! High 60F to Mid 70F is ideal. I find a heating mat on a cycling timer works well.
