Guide me through my first grow pretty please?

Feeling stoked fellas, and creating this thread to ask all the dumb questions that I can't seem to find great answers for before I run into a 5 alarm fire that I can't recover from
I don't have any shroom porn for you yet, but I will snap some pics the second I get a chance. Already had to make some adjustments to the grow.
So I just got 5 64qt tubs up and running Friday. Come Sunday I noticed some anomalies with the way the condensation was forming and attributed it to the overkill light I'm using making too much heat. Elevated the light, misted a bit to make up for evaporated water and they seem happy for now, as far as my newb eyes can tell. Running the EZ Dialed Pasty tubs, optional hole drilled, but taped over in the event I need to introduce more FAE later during pinning.
My first dumb question. I'm seeing all of these beautiful tubs with water beading up on top of the substrate. So far, I don't see that in my tubs. The sides are nice and sweaty though so I'm not super worried just yet. It has been 2 days.
Does it take time before I should see water beading up on the substrate? Is it always a requirement to have water beading up on the substrate to have a good grow?
I only know what field capacity is by the videos I have seen on the subject and tried to imitate the best I could, but it is entirely possible I botched that being a newb

Give them a minute, you'll notice droplets on the colonized surface when it comes time. Patience my man.

Thank you, this is reassuring I just see these awesome grows everywhere and I have no idea what I should be seeing at what stages. I'm proceeding with the ART of growing with a logical, perfectionist type of mind. It all drives me a little crazy at times lol.

So, finally got some pics. Grow is at a buddies house and I've been busy. Here is what all the tubs look like so far:





It has been 6 days. Still don't see water beading up on the sub. What do you think so far? Look happy? Dry? Wet? Can you tell which bucket got a little extra spawn?

How long has it been since you spawned to bulk?
Also, I should have mentioned that the current tubs I have going are in a room that is 77F and has a fan going in it. If they look dry, I'm considering moving them to a new room.

I've cultivated various types of plants, insects, and fungi, and I can relate to engaging in perfectionist type thinking. An obsessive determination to figure out the best way to maximize results (quality, quantity, and efficiency). Thanks for that, I appreciate the insight. I do typically try to keep a "beginner's mind" with a lot of things 
I'm going to try and double check on the tubs today to see how they are going. My friend just informed me he doesn't want to put them where I wanted to put them due to that being a moldy area of the house, probably not such a good idea I suppose. So alas, he may be stuck misting them every day to make up for the moisture loss

Got my first pins! Just took off all the tape on the "optional" holes. Hoping these tubs start to fly

Hopefully it ends up better than my first go! I have like a total of 6 monster fruits, out of 2 tubs. Hopefully my 2nd flush makes up for it.

So it looks like I'm ending up with some side pinning. From what I'm gathering, this is an indication of insufficient surface moisture? I have started to lightly mist the substrate to hopefully mitigate this problem. Is this a sign my substrate may have started out a little too dry?
Am I okay misting pins that are on top of the substrate or is that a no no?

Side pins are just showing there was a better micro climate on the side. Did you tamp down the substrate lightly, especially corners?

I wouldn't say really pack it, then it will take longer to colonize, but you do wanna tamp it down around the edges and the corners. I tamp the edges and corners and then the middle leveling everything out real nice for the coir casing layer.

Just make sure there’s little tiny water beads all over the surface. Seems like a few side pins show up no matter what most of the time.

Got it. Thanks guys. I'm just worried about missing pins now :/
Crackatoa, I will certainly keep that in mind for next time.
Also for next time if I use the same tub design should I make the substrate a little bit wetter in order to avoid the surface from drying out too quickly? Or do I just need to decrease free air Exchange?
I'd hate to have a wetter substrate that still has a dry surface lol.
Using Pasty's ez dial tubs. Small holes, no fill. I could either tape a couple off or increase substrate moisture next time
