Water level in PC

I usually just put enough water in my PC to come up to the bottom of the jars which are about an inch off the bottom of the pressure cooker. Basically just enough to steam up the entire cycle with out running dry....unless I'm doing agar then I fill up to the level of the agar, submerging most of the media bottle.
I keep ready about people adding vinegar to their water on the PC though, to prevent leaving residue on the jars...
Which makes me think they are bringing the water up higher and partially submerging their jars. Which makes me wonder if I'm doing it wrong, or if they are, or If it really doesn't matter...
I was under the impression that its the steam that heats up and sterilizes the jars?

The manual for the presto 23qt says to use 3qt of water. That's what I go for. I use RO water and no vinegar needed.

Correct. Steam does the sterilization. Vinager is useful if you have hard water. I always add a small splash.
Use whatever amount of water the PC manual tells you to use.
That being said I use about 2qts water in my aa. Always. I weigh my rocker down as well so i get no water loss..

So you just add a little weight to it so it doesn't rock until it's over 15 psi, and what, just use the pressure gauge ?

That's how I roll. I glued 3 quarters to the weight and I usually get to about 17-18 psi.

I use a heavy candle holder to hold the weight on my AA. I turn the gas at the minimum setting. At the end of the PC cycle, the gauge shows 20psi and I don't lose a drop of water.

I have a Presto 23q. I added 3 quarts (around 2,800ml) and a tablespoon of white vinegar. Had my jars rolling for 2 hours and managed to keep around 16-17psi at a very low heat setting. Granted I had coins added to my weight as everyone here. After my 2 hour cycle I had plenty of water left.

Be careful with the vinegar, when i the presence of aluminum and steel (the trivet or jar lids as spacers) it speeds up the corrosion of aluminum. It will prevent build up on jars but make sure you drain and rinse donβt just put your pc away with vinegar water in it.
I dont use it personally dont have hard water/ a little build up not gonna hurt nobody but a rusted out PC might
The presto manual calls for three qts h20 but I usually do two for jars and with bags I fill to about 1.5β below the top of the bottom layer of bags(with a layer of rings under the trivet)

You use like a teaspoon or two of vinegar. Enough to offset the minerals not enough to be corrosive or change the volume

Yah I've used vinegar for years I my PC. I even leave water inside when not in use and it hasnt corroded.
Doesnt look brand new but idc. Not cooking in that bitch anyway

So why are you guys adding vinegar if the water doesn't even reach the jars? Or is it?
I've never measured my water but I am using a 23qt presto...

its ok if the water touches the jars. I think you are thinking of the pf tek where they donβt recommend water touching the jars while steaming.

No not thinking of that...never steamed anything in my life, just don't know why you'd want to have the water level above the jars if you dont need to?

I feel like I saw a post on here recently where someone ruined their new AA by using a bit too much. When giving advice I tend to err on the side of caution.

By all means use it if you want to, Iβd just say not alot and ideally dont let it sit
The kind of corrosion weβre talking about isnt easily visible to the naked eye, and Iβm personally not willing to risk A 500$ AA941 over aesthetics.

I've ruined 2 Prestos and nearly a 3rd, hell my 4th even has minor pitting damage from galvanic corrosion. I assume it's my water softener water so now I use RO water and empty and dry my units ASAP. The trivet also corrode IDK why exactly.
