Favorite wine and cheese pairings?

Never have been much of a wine drinker until recently.
Im a big fan of white wines, Prosecco is one of my favorites. Ive found that brie and goat cheese pair with it really well.
Looking to try some new pairings.
Any favorites? Especially with darker wines? Chianti? Cabernet? Malbec? Port? Sherry? Vermouth?

I would do a Cabernet Sauvignon with gouda.

Ive really been wanting to try it. Its not easy finding a bottle of that for less than 40$
Settled for a chianti + gouda
Not disappointed

In my country it is common to pair a Rioja's red wine with Manchego's cheese.
Rioja's wine are usually with "tempranillo" grapes (body, neutral flavour as a wine can be flavourless...) and "garnachas" grapes (somekind of berry flavour).
And manchego is sheep aged (best ones are close to 2 years) cheese.
I hate white wine with all my might so this is all the wine-cheese pairing i know

White wine doesn't stain your teeth like red wine does. That's a good quality right?

With the amount of tobacco i smoke and coffee i drink im pretty sure that at this point red wine whitens my teeth.

If you're in Canada or USA you can most definitely find a Cabernet Sauvignon in the $6 to $10 range.
When it comes to wine, dont let the price of the bottle fool you.. The more expensive does not necessarily determine the quality. the cheaper bottles can be better.
Recently Pelee Islands Merlot semi-sweet has been my go-to. It goes good with soft cheeses like brie or Camembert, bleu cheese, Gorgonzola, etc

Ripple was a fortified and carbonated wine, that was popular in the United States, particularly in the 1970s (and made famous by Fred G. Sanford of Sanford and Son). Possessing a low 11% ABV (lower than modern table wines), it was originally marketed to "casual" drinkers. Due to its low price, it gained a negative reputation as a drink for destitute alcoholics. It was popular among young drinkers, both underage and college students, due to its low price. It was later replaced with Boone's Farm.
