Are wet grains easier to sterilize than drier grains?

Seems a few things are at play:



1) Water conducts heat well within the kernel

2) Grain surface dampness could turn to steam helping the process.



Thoughts? I swear I've read ideas on this around here, but I can't find it.

I know if my oats are even a little wet they will for sure 100% be bacterial, even if i don't inoculate them. My scenario is probably not that universal but I try to go the extra mile to make sure the grains are not overcooked or wet before the pc.

I didn't get my doctorate in the subject but I'd say yes... To a degree. I don't think it matters to us though. Any grain wet enough to support myc is wet enough to sterilize at the time and temp we use. Maybe if you loaded up completely dry grain it'd make a noticeable difference but i'm not sure.

I wondering if it could explain the vastly different PC times people use with success. There a dude (Bottle) that has a Presto 23 and stuffs it with two huge bags and PC's them for 90 minutes. With success for years.

I put my grains in the jar dry, then add some water. The grains aren’t covered in water and after the pc cycle the grains on top look pretty damn dry still. I shake it up after the pressure valve drops and they all even out with no excess moisture.

Less whet is better. Too much whet is asking for problems...
