Hi
I normally use telephone brand agar bit my local store was out. I got a different brand and the ingredient list sugar, agar agar.
Is this going to work, do I need to change the recipe to allow for the sugar that's present in this agar agar? I've been using 1/2 cup water, 3g dextrose (instant pots) 2g agar agar, 1g honey.
Thanks in advance

Does it list the quantity of sugar per gram of powder?

It sucks. I used it and even went heavy with the amount I used and it is so funny. I used like 20g to 2 cups of water and 6tsp of potato flakes and it came out runny still. It's crap.

Sugar is first ingredient listed so that means it has more sugar than agar

hmm
Realize that certain things present in an agar recipe, when added too early they may interact with the agar so that it can interact less with itself to gel well. Thus the order of adding things matters.
Of course you have no control over this with pre-added stuff. I'm not saying you cant make decent agar with adding sugar early - it should normally work fine but i guess the quantity matters here. If meant for dessert, not great if they add some serious amount of sugar.
Don't use something like this to begin with because even if it works as agar it would make it kinda impossible to judge where you are at with macronutrition of carbs like sugars, if there is already too much in it or how much needs to be added?
So pre-mixed things suck unless they are specifically pre-mixed for your purpose and already dosed to that end. Otherwise go on eBay or ... amazon for a bunch of agar powder.

Telephone agar is the home microbiology gold standard for a reason, cheap agar takes more to get the same firmness and that increases gelling temperature and condensation problems. Even without the sugar your agar mix might be substandard. That doesnt mean its a waste. You can make a modified PDA with 1.5% telephone agar and the sweet agar as a dextrose replacement. You could also use it in LC's. If desperate you could combine it with gelatin and dog food powder or potato flakes to make plates that would last long enough for the store to restock the good agar. Gelatin just slowly liquefies when mycelium or bacterium grow on it.
