Hello everybody and welcome to my thread! So I made a full transition from wbs to wheat this year and I don't regret it in the least! I see very little love for wheat round these parts and there aren't many prep teks for wheat or how to tell if grains are fully hydrated in general. For these reasons I made this thread to be a simple and comprehensive guide to working with wheat. I take no credit for this prep style as it's based on other grain preps that are long established, but I still see lots of questions about moisture content etc so here we go!


WHY WHEAT?

Ok so I used to love wbs but after using wheat I don't know if I'll go back. Wbs is great, but it's expensive and harder to get fully hydrated. Wheat is $12 or so for 50lbs and holds a ton of water. Fully hydrated grains are roughly twice the size of a dry grain or more. There are many reasons I prefer it now but cost, availability in my area, water retention, and ease of prep are the hard hitters.

PREP

First thing is to figure out how much grain you need for whatever you're doing. Like I mentioned before, wheat expands to about twice it's size when fully hydrated. If you need 10 full jars for A2G then I would measure out 5 jars of dry wheat. If you're doing G2G then 4 jars will do it since you don't fill receiving jars all the way.

Ok after measuring your grain you have to rinse it. Wheat often has a lot of bran coating the grain from the mill.

You can see in the above photo that there is bran all over my hands. I just grabbed a random handful from the bag so you can see how much there is. If this stuff is left in it will turn into a mush after hydrating. It doesn't take much  time to rinse it off so if your wheat has lots of bran, don't skip this step!

After rinsing the bran off, it's time to hydrate. I used to be an advocate of fooman's prep for all grains, but I found that it doesn't fully hydrate wheat. I have since switched to a hard boil and I prefer it for it's speed and hydrating ability.

Start by filling whatever pot you choose to use with your dry grain. Turn your sink to the hottest temp and fill the pot with enough water to double the volume of your grain. If your grain fills the pot up 5 inches, fill the pot with water to the 10 inch mark. While doing this, turn your burner on so it's hot when you put the pot on it.

(Note: I use gypsum in my water but it's optional)

Bring the pot up to a boil, stirring occasionally. Once it gets to a boil set a mental timer for 15 minutes. I say mental timer because the actual amount of time it takes varies.

THE GRAIN CHECK

During this 15 minutes you should be checking your grain for level of hydration. I use a spoon to fish out a few grains and crack them open. This first photo is a pic of an under-hydrated grain:

You can see that there is an opaque/white mass in the center of the grain and when opened this is what it looks like:

The white inner core is unhydrated starch and proteins. This is not what you want to see in your grain.

I take my grain off the heat when it's about 80+% hydrated. This is because the grain will continue to hydrate as it drains and cools. Here is a pic of what I consider to be a nearly done grain ready for draining:

This grain looks more plump and less opaque in the center. When opened we find it nearly fully hydrated:

When 70% or so of my grains look like the above photo I take my grains off the heat to strain.

To strain I line my sink with a bit of window screen like so:

Then I dump my pot of grains in the screen. After it's drained for a sec I pull the screen up by the corners and lay it out on a towel on the floor to steam dry


Let it steam dry, turning the pile occasionally, until dry on the outside. This is what my wheat looks like going into the PC:

No pooling water and no wetness against the glass.

I run my pc for 2 hrs at 17 or 18 psi. Here is a pic of the grains post PC shake:

As you can see there is no standing water or excess moisture. There are some opened grains with exposed cores, but no burst grains.

Nice man, this is pretty much exactly how I prep my wheat. No soak, hard boil till it's just right.

And I don't got by a time either, always by how the grain looks :thumbup:


edit: one thing I don't use is a large screen like that. I have 4 large sized mesh/wire colanders I use they are a real pain in the ass

Is that a window screen you're using or a wire mesh screen from the hardware store or something?

It's a roll of metal window screen material from HD. Super cheap and works really well.
I may make a frame for it here soon but I'm lazy :lol:

Thanks! Ya I know it's nothing new but hardly any wheat preps out there.
Really it's more about the grain hydration comparison because I see lots of
questions regarding what proper hydration looks like. That goes for all grains.

And ya I thought the title would catch eyes :lol:

Where do you source your wheat? Always wanted to try it but I haven't seen it in a feed store and it's expensive online.

I get it from a feed store. I just ask for whole wheat :shrug: It's possible
That they don't have it but I'd be surprised honestly. Gotta go to horse country
cause that's where you'll find it

@asura- hell ya bro hope you like it! Haven't had any issues with underhydrated
grain since switching to wheat. I like milo and millet for inoc points but
honestly haven't noticed a huge difference in colonization times anyway.

My favorite is rye but it's kinda expensive too online. Went through 100 pounds of oats cause is super cheap but I don't like it, went back to rye. Wheat looks like it would turn out very similar to rye.

Wheat and rye are very similar grains. So much so that they can hybridize as far as I know.
