Thanks so much! I've been searching for a while now and spent 6 hours looking one day with nothing and then spotted these within 5 minutes the next haha.

I was also curious what the ideal height is before harvesting. I want to be sure and let them grow tall enough to release their spores for next season but don't want them to start dying out or get too big. Since it's my first time just trying to figure it all out. Thanks everyone!

I use a pair of supersharp fiskars pruning scissors and cut them a few mm from the dirt so I don't move/disturb any of the soil/mycelium. The one you picked is pretty much perfect.

Think of mushrooms (any mushrooms) like the apples on an apple tree. You can pick the fruit, just don't damage the tree.
With mushrooms the 'tree' is the mycelium that is underground. Don't tear up, rake up, excessively stomp down, etc. the soil and the mushrooms will continue to fruit. Whether or not they spore won't affect the patch they came from so much - they simply won't spread.
-------------------- Disclaimer - I'm just a hobbyist and cannot absolutely guarantee any ID offered. I'm most familiar with the species found in the Pacific Northwest - those found in other parts of the world may vary considerably, so always do your own research to find out what grows in your area and what lookalikes you need to be aware of. Understand that many mushroom species cannot be 100% reliably identified by photographs alone, even by an expert, so it may not be possible to go beyond suggesting a probable genus.
