Usually 10 fresh is 1 dry. 90% or so water weight.

you really cant say though based on height..... I mean a super experienced dude like mister Magash could give an estimate, but what if that 6 inch cube is a toothpick?

invest in a scale man, its the best way to go.... you dont have to buy a gempro for $150, you can find a good (for what your doing) handheld scale for like $10!! hit up www.myweigh.com and make your way to old will knotts site (you have to navigate through myweigh.com)
they go some nice, cheap stuff to weigh out 1 gram to like 10-20 grams. like $10!

Price dry 5-10 bucks a gram, depends on availability in your area.

I've usually air-dried(under a fan) one ounce fresh to about 8 grams.

Divide the number of grams in wet weight by 10 and that will give you a good estimate of what the dry weight will be. So if a fruit weighs 60 grams it will weigh out to approx. 6 grams.
