Casings Complete?

One quick question, i am about to case my cakes but this is my first time and just from looking at some pictures it looks like the mycelium looks different on a casing than on a cake. How am i able to tell when a casing is completely colonized and i am able to take the cover off of it.

Got one question to add to this too. A couple of my cakes never finished colonizing, and i know for a fact that they have stopped. I was wondering if cutting a cake through part of the mycelium to insure all the vermiculate is gone would bruise the cake. I want to get all the verm off so i can case the colonized parts of the cake.

see when i think of 100% colonized i think the whole thing would be covered with mycelium. What characteristics do you look for to be able to determine that it is complete?

Still wondering about cutting the mycelium.
