Damn! WTF, I'm following these teks to a T, and if anything UNDER-cooking my grains
I can't figure this shit out. So frustrated. Going from the previously linked tek I'm doing:
- 12+hour hot water soak, after rinsing 3+ times
- Cooking until barely boiled for 10 min (simmer only, not roiling boil)
- Straining hot
I even baby-sat these grains as they boiled WTF I'm not a weird altitude. I hate this shit.

How long are you soaking? It is more likely a problem with moisture content rather than cook time

From this picture it was about 18 hours, another one turned out almost the same at 13 hours

Also, a hard boil works for me with rye bc the grains get moving through the water and you don't have the same grains on the hotter bottom of your pan all the time, overcooking them. I cook my rye berries longer than you do and I have less burst kernels. Also I stir a lot during the boil. It's only 12 or 13 minutes work

Jesus you’re doing way too much fuck all that. cold soak for 12 hours strain through a window screen layout in the sun or under a fan until mostly dry to the touch then load into your jars

Nope you know i use 60% millet 30% RYe 10% oat. I load into a 5 gallon bucket filled with cold water let’s soak for 12 hours. Then I dump them into a window screen tie it off with a string hang it from a clothesline pole and spray it with the hose to rinse it off a little bit then I let it hang there for a few hours you only want moisture inside of the grain you do not want surface moisture that leads to bacteria most of the grain preps I’ve seen are way too much. I used to do it too I would soak For 24 hours then put in a pot bring To a boil immediately shut off then I would spread out on the table under a fan and let them evaporate it did work but I lost way more jars doing it that way and it required a much more energy time and was a big pain in the ass I’m so happy I switch to this method not only is it much more affective but it’s almost no work at all

Sounds good jake. Not going to argue with success. It's pretty challenging for me to get a 12 hour exactly soak. Most days it's around 20-24 hours (day job and all). Still ok?

It doesn’t have to be exact if it’s cold water or you’ll be OK to let it go 16 hours 24 is pushing it although it still well for the most part it be OK if you properly dry it what’s fucking you up is the heated soaks and boiling. It way over hydrates your grain
