Yes, mushrooms are nutritious. Fresh mushrooms are about 90% water, but they do contain a fair bit of fat, carbohydrate protein, minerals and vitamins. I have read specific analytical tables of various edible mushroom species in a library book entitled "biology and cultivation of edible mushrooms", but i think it is out of print. Stamets's books do have info on nutritiopnal content of mushrooms.
