*UPDATE* 8 days into first grow. Growth stalled?

This is my first grow and I was fortunate enough to see pinning within the first 3-4 days. While this may sound like an ideal circumstance--pinning has occurred on only 4 cakes. 3 of the 4 cakes yielded one shroom that weighs about 1g dry (3 total) and a fourth that weighed .5g dry--totaling 3.5 grams dry. 

After 8 days I now have only one more pin growing cake and nothing else. I was hoping to see much more growth than this and am questioning what may be going on. I've been heavily misting and fanning 4-5 times a day. I mist until my vermiculite is glistening but I noticed that the sides of my cakes feel more dry than wet. However, the cakes themselves seem pretty solid with moisture on the inside. There's some slight bruising on 2 cakes but that's about it. Is it possible that my growth as stalled? If so, any ideas why? Should I be dunking the 4 cakes after they only yield 1 gram each of dried mushrooms?

Here's the overview & setup:
6 fully colonized brf cakes with B+ that I dunked for (24) hours and rolled them in coarse vermiculite (I realize now that I should have used fine vermiculite). They're in my SGFC  built to spec with 1/4-inch holes 2-inches apart top-to-bottom and side-to-side on all six sides. I have a 4.5-inch layer of moist perlite and my FC is raised by (4) 1/2-pint jars to allow airflow underneath and I'm using indirect sunlight from a nearby window for lighting. RH in my house is about 50%.
Ambient temperature between 72F - 78F

Any and all feedback is greatly appreciated.

Given the fact that a couple cakes already fruited, i assume your myc is healthy. Your SGFC looks good and if you followed the teks correctly, just be patient and trust the tek. Sometimes it takes a bit to see results.

Is it not a weird sign that I've gotten quick growth with just a few seemingly healthy looking mushrooms and then nothing afterwards? Is this common or is there something that could explain that?

Yes it is kinda weird and im not positive what might explain that.

I do know that sometimes tubs will throw a few fruits up before the first major flush. That or perhaps theres a contam hidden and the mushrooms wanted to throw up some spores before it was too late?? Just a possibility, your cakes look good though so i wouldnt really assume the latter. Give it another week and maintain Rh and see what happens.

One thing I am noticing is that my SGFC doesn't feel super humid when I put my hand in it even though I built it to spec. I've got 4.5 - 5 inches of moist perlite in there and spray it 4 to 6 times each day. There is condensation on the walls which dissipates after a few hours. I even re-rinsed the perlite yesterday to address this.
