what's more important temp or psi?

I have rigged my PC up with a PID system to better monitor the temp and to better pasteurize bulk but now I'm watching myers mushrooms who sterilizes at 245 degrees which is only 12 or 13 psi. So I ask you guys what's more important temp or psi

Being a complete noob at that stuff but having a general understanding of physics and biology, my guess is that temp would be more instrumental in sterilization. Tho the pressure sort of takes care of any extraneous variables by creating an environment where things disintegrate more quickly. I'd use temp as the primary indicator, and not worry about pressure as much.

Theyre directly related. At least in pressure cookers or autoclaves.
In a PC temp and pressure go up until it gets high enough to be expelled by the valve. Steam releases, takes heat with it, temp and pressure go back down unless there is a heat source that continuously heats the water passed the temp/psi limit.
For sterilization temp is more important. You can sterilize anything by baking it in an oven at normal pressure. Youll know every inch has reached or passed sterilization temps when its completely dry and possible charred

If your temperature is less than expected at the given psi then you know you didn't vent well enough. Entrapped air is the only way the temperature wont be what it's supposed to be at a given psi. Psi=temperature when using 100% saturated steam
Temperature and psi are not nearly as important as 100% saturated steam. You could do 30psi but 80% air and it would take longer to sterilize than it would at even 10psi of 100% steam.

You need pressure to increase temps and as stated with the PC full of steam it's not going to matter it's the steam that's doing the work not enough venting and you are going to have inconsistent results.

My biggest concern is everyone pushes the 15psi as the number to sterilize at which according to stammets is 250 degrees the PID was installed since it gives me the ability to run a cycle and not have to pay as much attention. Am I better off just turning the PID up to 250 (15psi) or am I good at the 240 (12psi). All my cycles have a start temp of 250 for 5 min at which point I vent for any stuck air. The 240 degree i pulled from stammets gourmet book
