Benefits of lower PSI -longer sterilization?

I've come across many experienced mycologists online who are sterilizing their sawdust bags for up to 12-15 hours at 11 or 12 psi in barrels. Most small scale cultivators hit their substrates for 2-3 hours at 15 psi in the PC.

So whats the deal? I've never understood why anyone would make the sterilization process longer. I understand that they both do virtually the same thing, but is there any benefit to lower psi? Or are larger sterilization units just not powerful enough to hit 15psi. Or is the energy cost higher at 15 psi? Or is 15 PSI minimizing the nutrients in my masters mix?

Sawdust and grain are two very different substrates. Sawdust is basically composed of cellulose and lignin and grains are packed with essential nutrients from microorganisms to some of the largest land mammals. If you try hydrating grain and leaving it wet in open air and you'll soon discover wonderful carribean green colors all over the grains. But if you get some sawdust wet you may not encounter a ton of eco system in there. Some of the mødre common bacterial spores found on/inside grain need to be exposed to temperatures of 121C and above for minimum 15minutes effective sterilization time (when it is determined that maximum heat of 121C at 15PSI has reached into the center of the grain located at the center of the jar. For heat to manage to permiate the center of every grain we have to give the PC some time to achieve this, it takes some time. But the heat and durations that's technically sterilizing the jar and doing the work is basically 120+Temps for 15+minutes. That's the theory of it at least, or parts of it :thumbup:

My uneducated guess is that it would have to do with the amount of spawn being sterilized once you go to bags the sterilization time is increased and the larger the bag longer the sterilization time. So barrel crammed full of bags is going to take longer than a PC crammed full of jars. But being that your doing so much volume in one run its still more efficent than doing a bunch smaller runs in a PC.

Also probably just not capable of hitting 15 but idk ive never built my own sterilizer. Id be willing to bet it takes alot more energy to reach 15psi in a large vessel than a small one.
