Jars with sorghum: 2 hours 15 psi is too much for sorghum. Suggestions?
    #26074953 -

Hello, i live in the country side of Costa Rica and the only thing that i can get locally is sorghum ( very similar to millet but 100% sure is sorghum because i see the plants from my house).
I have a presto pressure cooker where input inside 20 9oz jars in 2 floors: the one up are fine, the one down not.... the first inch of sorghum get overcooked and sticky.
I usually put the jars inside the pressure cooker and when the water is boiling i keep going for 10 minutes with the valve open to ventilate, after i close it and when is 15 psi i count 2 hours. Whith this timing sorghum get overcooked .
If i keep at 15 psi for 1 hour 50 minutes the sorghum grains are fine.
If i do not ventilate for 10 minutes the sorghum grains are fine.

I tried to put a fabric under the jars but is not working ....

Solution i have in mind:
1) Cook at 15 psi for 1 hour and 50 minute and do not worry too much.
2) put under the jars a tiny peace of wood and  put between  the fire and the pot a metal mesh to spread the heat in all the pot bottom...
3) i hope you can give me a better idea.

Thanks

Your grain is bursting from bad grain prep. Never ever boil millet. The best way to prepare millet is a hot soak for 30 minutes. bring your pot of water to a boil. As soon as it starts bubbling hard turn off the heat amd dump your grains in the pot. Set a timer for 30 minutes. Then dry your grain for 2 hours in your sink in on a window screen or on some towels or a newspaper. After your pc cycle  secure the lid with one hand and shake with the other. You want the moisture spread out over all the grains. Then do the same thing again in 8 hours. Your grain will come out perfect everytime if you prep it this way.

I use it too, its the cheapest grain in my area

My prep is

I rinse it. Place in pot with water, bring to boil. Once a light boil starts I put a top on the pot and set a timer for 10mins. Let it boil for the entire 10mins, only turn down the heat if your pot is boiling over When the time goes off I strain my milo, and spread it out on a towel till it stops steaming. Load into jars, PC.

I pc for 2 hours at 17-19psi. I have 3 quarters glued to weigh down, its a 23qt presto

Sorghum = milo

He said β€œits like millet” not its like milo. Boiling milo for 10 minutes wont get you any burst grains like millet. You cant boil millet. Dont boil millet op. Hot soak it.

People who fuck up bird seed all do the same error. They dont know the difference between a very light boil (in most teks) and a rolling boil. If you are experienced you can get away with a light boil or simmer. Either is totally unecssary. I use the same prep for oats, milo, and wheat and it works great. Full hydrated grains with no burst grains.

Just to be sure. After the pc cycle i grab the jars and i shake them 2 times: the first one when theybare cold, the second one after 8 hours. Is it like this?

Shake once the pressure drops to zero without removing the rocker wreight. The jars will still be hot. The reason is that you dont want the jars to have pools of water on the bottom. If you dont shake the grains tends to stick together.  BE careful if you use plastic lids. Plastic lids get loose and maleable when hot and can pop off if you dont hold them down while shaking.

Milo = sorghum
Millet = not sorghum/milo but similar

If the bottom jars are too wet and the top are not its because they're not high enough out of the water. Or the foil going over the lids is long enough to dip in the water and on cool down its the only path to equalize pressure so it sucks up water instead of air
