This thing actually looks super scary! Just interested as to what mushroom it could be and what would happen if someone ate it. It looks like death. Should I be worried about it next to my veggie plant?

It's a Coprinellus. They secrete enzymes to break themselves down like that. It's why they're commonly referred to as "ink caps".

It's breaking down dead plant material in your garden and producing compost. It won't harm your plants.
