This is a really easy fix.

Nutritional status blood testing is easy to do. If you want to make it easy for your doctor to justify the diagnostic to your insurance company, just claim that you're trying to conceive but you're concerned that nutritional status may be suboptimal.

If her nutritional status is fine then it's time to do further diagnostics; ie cultures/imaging/etc.

While you're at it, if you say you're trying to conceive, you can easily get a full endocrine/immune/cardiac/renal/hematologic diagnostics. BMP, creatinine, TSH/T3, anemia, cortisol, aldosterone, CBCs, WBCs. Get the works, they'll pay for it. The insurance company would much rather pay for expecting mothers to get tested than pay for treatment of preventable cases of chronically ill newborns.

If you want to convince your SO to get the testing done, get her into one of these alternative medical etiology groups. A really popular one right now is the Magnesium Advocacy Group/"The Root Cause Protocol", they are good at convincing people that so many of their ailments stem from magnesium deficiency. They do a good job of convincing people who don't really understand human physiology that they ought to be taking it seriously anyway. Suggest the possibility to her that she is magnesium deficient (she may, in fact, be). This may motivate her to go to the doctor seeking help. The doctor will almost certainly order other nutritional status diagnostic testing at the same time, because that's just what doctors do- anything they can justify to insurance to accumulate the data THEY think they need. They'll hear your SO say she thinks she might be mag deficient, they'll ask her about her diet, and when she tells them, they'll order a standard workup for assessing diet-specific nutritional status, just because they know they need to be looking at other stuff besides mag, even if she doesn't.

I have never seen a vegetarian beaming with health ever.  Just saying.

I would like to be one but I am afraid.  and I have known older people who died shortly after changing diet.  sorry animals, I love you but my life is more important.  :frown:
