Keeping fresh ones fresh and keeping dry ones good enough to consume

Hey guys

So was wondering how to keep the little fellas decent enough to consume after they've been harvested. I presume with fresh ones it's best to keep them in an air tight container in the fridge. But if I was to dry them out, once they're dried out, what is the best way to store them so they dont lose any potency?

Nice one bodhisatta. Does the baggie need to be kept in a warm place like the airing cupboard? Or doesn't it matter?

As long as they're cracker dry they'll stay good in a bag for a very long time. Temp doesn't matter much.

I keep mine cracker dry in a Mason jar with a little desiccant in it. I hear people put oxygen absorbers in with them. Oxygen and light from what I have read is what lowers potency

Don't keep fresh mushrooms in air tight container.  Think about how mushrooms are packaged in a grocery store.

Plastic bags are not good, they will let moisture in, a Mason jar is best, paper bag is next best. Storing dry fruit in the refrigerator/ freezer in a glass jar  or paper bag is the  best way in my opinion,
unless you  have a vacuum sealer.

So it's ok to leave them in the freezer as well? Leaving them in the freezer will be easier than the fridge. But then again leaving them in the airing cupboard will be easier than leaving them in the freezer. Lol

The dried mushrooms you can put in the freezer. Only freeze fresh mushroom if you're planning to make tea from them in the near future.

Yup.

Freah shrooms will last about a week in the fridge. About 2 weeks in the freezer. Then they start to literealy melt away.

mushrooms are packaged like crap at the store:shrug: i always have to dig through the prepackaged ones cause half are fucked up from being wrapped too tightly.


they are packed by store employees not farmers. pack home grown cubes like that and id bet they rot hella fast.

For some reason I'd want to preserve fresh cubes I just wrap them in paper towels and then put them in my refrigerator

For my gourmets I deliver them to restaurants just in Tupperware containers with holes melted in the woods

Now they're only selling truffels in the neatherlands but cubes were sold in heat sealed plastic bags or in Tupperware with a little hole poked in em.

Some species last longer than others but they're all about a week. All the farmers markets around here put them in leftover tomato plastic cup/trays and Saran them. Poke a hole if you want they might last an extra day

Thanks for clarifying that, I don't freeze fresh mushrooms at all, but I have never tried either,  I've always dried thoroughly.

Remember,  changes in air temperature outside the container will cause changes inside as well,  that's what will cause problems. If you keep them in a jar, inside a cabinet, you should be fine, freezer or refrigerator is optimal to me. Refrigerator is designed to keep out moisture and will keep your fruit cracker dry, as will the freezer,  but remember,  as soon as you take them out, they will start pulling moisture from the air. Plastic bags are the worst thing for keeping fruiting,  they will sweat, paper is better.

I don't plan on keeping produce i buy longer than 2 days anyway. But ive put fresh cubes in ziplock bags in the fridge for days on end waiting for people who wanted fresh ones. They don't rot. I forgotten about some kings once they looked kinda bad after two weeks

You have to remember, stores are not packaging for long term storage and they lose a lot of product to rot.

I have had the opposite experience, plastic makes them rot faster, now I have had fresh cubes in paper dry cracker dry in the fridge without rotting.  It could depend upon where you are in the world,  it's hot and humid af here.

Ziplock freezer bags work good at keeping moisture out, kinda what they are designed for. I keep mine dried in those and they last a long time in the closet.

The inside of your fridge doesn't care what the Weather outside is.
If you put any mushrooms in paper bags they'll never rot they just dry out. Most people want to keep them fresh for the few days before using em.

I am most likely to be consuming them dry so keeping them in the fridge for a few days wont be my method of storing them. I will most likely get them cracker dry in an airing cupboard and once they are cracker dry, I will put them in a jar and either leave them in the airing cupboard or leave them in my wardrobe.

How long can cracker dry shrooms stay in a jar for before needing to be consumed? A long time I'm guessing

I agree, just make sure wherever you store them doesn't have wide swings in temperature throughout the day and night or condensation will form causing them to rot, even in sealed jars.

They shouldn't be in position to reabsorb moisture and if they do not enough to rot

I found years old shrooms in a tackle box in a garage that went from -20f to 100+f and they were bendy in a Ziploc bag. They still worked. And didn't have anything growing on them.

Edible mushrooms ive never seen cracker dry. Even the porcini salt grinder i have the little porcini pieces are not cracker dry.
