I prepped several shoeboxes with this tek 4 weeks ago and the ones I thought were too wet (5-10 drops when squeezed) are doing better than the ones I could squeeze only 1 drop from. Maybe it’s down to your individual growing environment? RH has been 28-35 indoors here.

I did mist the shoebox 1 time about 5 days ago because I was worried it looked to be developing a little slow compared to the posted guide (tho now I wonder If i was being a little too hasty lol)

At least double up the ratio for substrate,
so use more coir to have more moisture

Oh no, you don´t have to.
Your actual ratio is fine for questionable spawn,
for not giving bacteria extra breeding ground by adding more moisture.
If you have clean spawn you can ramp the ratio up.
Remember, the more moisture, the more fruiting bodies, as they´re more than 90% water.
I´m often at 1:4-1:5 (spawn:substrate), maybe even more, i don´t calculate.
I dump in the spawn and fill up with substrate until i reach the desired height,
usually 3-4", shoeboxes up to the rim.
Colonization times are a bit longer but that´s it
