Wholesale prices

I've been trying to deduce the wholesale price for my region but I can't figure it out.
I want to figure out the price per pound of cartons of tray packaged mushrooms.

Here is what is says:
MUSHROOMS: MARKET STEADY. 10 lb

Luckily, I know you're from Wisconsin.  :smile:

I would say "WI Shiitake 21.00 "  means they are paying USD$21 for
a  "5 lb carton" of Shiitake.

It would seem when states are not abbreviated, the price for that
packaging method/species is universal.

I wouldn't be too quick to price your product that low. I'll bet you can get more.

I'm planning on marketing to restaurants, grocers, and farmers markets; if that is not spreading myself too thin. I've talked to one grocer that said he can get them for bulk sale already, but doesn't because of cost and shiitakes sell bad. They sell shiitake in bulk. He told me that the price is too high and scares consumers away. I want to package my shrooms in 1/4 lb cartons for grocery sale. Each package would retail ~$3 and IMHO that is less scary. I think I can get $6/lb for organic oysters, but I couldn't figure that wholesale thing out. I've also tossed around the idea of marketing the King Oyster as an oyster mushroom that is as good as a shiitake and sell it for the low end of the shiitake price range.

Are the prices on that acrobat file from farmer -> grocer or from farmer -> wholesaler? Where can I find

The bottom portion is the tray packed mushrooms:
6 4-oz trays film wrapped
PA Shiitake 10.75-13.00 mostly 11.00-12.00

I would agree with creekfarmer on not selling them that low, I have found that people will pay a good percentage more. 5 lb trays in my area are listed as selling for $23, but I'm able to get $35-40 for them.

The prices on the file are what the wholesalers are getting for them.

I get $8 a pound for indoor grown P. ostreatus. I get $9.25 a pound for outdoor grown oysters. I marketed the outdoor product as meatier, tastier, and they do have a longer shelf life. I believe that restaurants are the only way to go. The other folks are just going to want something for nothing. The most I've had to sell in one weeks has been 60 pounds. And I sold everyone I grew. No packaging. I just went out three different days with an apple box full and did cold calls with product in hand.

Ah....now it does make a bit more sense, that those are the prices the giant grocery chains are paying.

I'm as of this day feeling out my local market for shiitake. So far me and my customers are happy with a flat rate of $1/oz. aka $16 per lb.

I haven't had the time or resources to obtain suitable packaging so I just grabbed some paper lunch sacks, whipped up a spiffy circular logo (avery #8293) to hold the bag closed, and added my business card with a recipe card.

I prepackaged them in 6oz bags since that seems to be about the right amount for someone to test drive them and $6 is easy to let go of.

I live in the sticks. But I can drive 30 minutes any direction and be in trendy little mountain towns. I'm almost 3 hours northeast of Atlanta.

I was selling them at the price listed on the market prices till you (I think) said how much you were getting, so I started asking for more. I have found people will pay whatever you ask, if it's reasonable, without even questioning the price.

I live close to a fairly large metro area.
